Left over stew "sauce"?

AnonYonimousBird · 07/11/2013 17:44

I made a big batch of stew yesterday, have bagged up the portions to freeze, allowing quite a bit of the liquid in each, however, I am still left with quite a bit of just the liquid leftover. I wondered about making it into a thick meaty soup, but not sure whether that would work or not.

Any other thoughts? Just freeze the sauce as is for a future stew, or is there anything else I can do with it that you can think of?

Thanks.

I just heat it up as soup for lunch, with crusty bread.

Soup, it will be delicious.

How thick are we talking here? Can you add some tinned toms and use it as a pasta sauce (that's what I do with lamb stew).

I tried a spoonful, as if it were soup and it is rather rich, though it is tasty! I may add some veg or something, it can be some kind of beefy veg soup at the weekend perhaps.

nicename - what I am left with is a bit runny for a pasta sauce, even with toms added I suspect, though I like that idea and I may experiment with some of it - I have loads!

Thanks for the ideas.

I use it as gravy, on a roast or sausages and mash.

I freeze it labelled as gravy, then I am very happy when I have bangers and mash and find ready made gravy in the freezer.

I made stew and have left overs , not meat but a lot of potatoes, what can I do with this? I do know I can not freeze the potatoes.

If it's too runny for a pasta sauce, thicken with a little cornflour 👍

Or, fry off some more onions, garlic and herbs in butter, add flour to make a roux then use your left over liquid to build up the sauce to the required consistency.
Throw in some other bits if required and use with pasta/rice or whatever you fancy 👍

I always make a quick bowl of cous cous and have it ladled on top.

Super quick and nutririous easy lunch!

I'd do soup, or use it as a sauce on some mashed potatoes, or cook some more meat and use it to make a pie.

You can freeze mashed potato. Would it work to mash your leftover potatoes and use them to top some sort of pie?

I second the meat juice/sauce as gravy. It’s the best gravy! Just thicken with a bit of cornflour if it’s too runny.

Here in Italy we put the leftover sauce with ravioli, just make sure they are meat ravioli and not a cheese or fish! Mouth watering I could eat it now, one of my favourite dishes.

By "not meat" do you mean it was a vegetable stew, or no chunks of meat left, but potato in meaty gravy? Either way, I'd use it as a soup base. If just vegetables, I'd add veg stock, plus some kind of spicy seasoning (maybe a Moroccan mix?) and blend for spicy vegetable soup. If beefy, I'd probably chop the potato up small, add a tin of tomatoes and a tin of kidney beans plus fajita seasoning (or chilli, smoky paprika, cumin, oregano), beef stock, and go for Mexican beef and bean soup. Both soups will be freezable. Make good lunches!

Cook macaroni in it (no water!) - just heat it until it begins to simmer, add the pasta and cook until al dente. It takes on the flavour of the gravy.
