I'd do a nice stew. Get some beef shin if you can. Pop in some onions, carrots, celery, a little stock, red wine (not too much liquid), a bouquet garni, bay leaf, tomato paste and rosemary. If you want to make it one-pot pop some potatoes in too or add dumplings to the top nearer the end.

Chicken, chorizo, red pepper, red onion, tin toms, tsp paprika, chicken stock, delicious.

Pork mince, chopped courgette, chopped carrott, passata, tbsp ground fennel, tsp paprika, tsp garlic powder, gorgeous.

Browned meatballs, onion, tin toms, tsp cumin, tsp coriander, tsp chilli powder, beef stock, scrumptious.

Chicken thighs, tin pineapple chunks, onion, handful of raisins, tbsp flour, tbsp curry powder, chicken stock, tsp ginger, bay leaves, cocount milk, lush.

Well that is what I am having anyway!

Sausages chopped up (I brown mine in the pan a hit first but still nice if you don't), chorizo chopped up, onion, mushrooms, 2 peppers, spinach, tin of tomatoes, tin of passata, garlic and cook! Serve on rice or pasta! This is amazing honestly!

Make shredded beef burritos.

Lump of beef, onions and peppers with some spices / seasoning (No stock) into the slowcooker for hours. An hour before you want to eat remove the meat and shred. Return to the slowcooker, add some kidney beans if you like.

Serve with wraps / rice / salsa / cheese etc. It is delicious.

Chicken and chorizo stew with peppers, onions, mushrooms and tomato sauce

Beef stew with dumplings

Meatballs in a tomato sauce

I love my slow cooker!!

trying this week ;
oxcheek with leek/carrots/beetroot plus tin chopped toms some star anise and splash soy
did a variation a couple of weeks back with chopped squash instead of beets and it was lovely - meat so tender, this time not browning first really hope its ok as so much faster - may add beans as well with an hour to go to stretch planning on serving with crusty bread..

hoping to try a curry later this week or maybe this;

chicken, chorizo, butternut squash, red onion, red peppers, tin of canallini beans, tin of tomatos, chicken stock. Add some flatleaf parsley and grated orange rind at the end of cooking - serve with rice or big chunks crusty bread

Lamb sauted with lots of pepper and cumin, white onions, butternut squash, dried mint, chilli flakes, bay, garlic, chicken stock, dried apricots and a tin of tomatoes - lovely spicy lamb tagine type thing, add pine nuts or pumpkin seeds at the end, serve with couscous

Guess who bought way too much butternut squash this weekend....

3rd if I'm not browning stuff I put in the slow cooker I often stick in a spoonful of onion marmalade - it provides a quick and easy shortcut to get nearly all the flavours you would normally get from softening onions and browning the meat.

If you slow cook lots, it's a very handy thing to have in the fridge to save loads of time!

Do you not need to cover with liquid? I always assumed that the meat would dry out without liquid cover, based on the way the bits of meat poking out of the liquid are different from the bits below. I pop the lot on the stove to reduce down when I get home from work.

No definitely do not need to cover with liquid. I put in joints of meat with no liquid, and any casserole or curry, I would never put more liquid than either a tin of tomatoes, a carton of passata or a tin of coconut milk, or equivalent.

thanks for the tip, but it worked fine, but do have some so may try that on next attempt! so happy as only cut the leeks and carrots only took a few minutes and disappeared ...think the beets and 4/5 star anise gave enough flavour....I chucked in tin of butter beans so only liquid the tin chopped tomotoes...may add a bit more next time as wanted more sauce. it tasted so nice...

got a squash to use up so thinking squash/sausage/bean combo next..
