Tips for making veg naice

I need to up dp & ds ratio of veg : meat & starch

Dp eats most veg, ds (13) is fussy with veg but will try when presented with veg prepared different ways.

They are both big eaters, I need to start filling them both up with more veg as both waistlines and budget dictates.

I'm happy with 1/2 + plate of steamed veg plus main & starch but this doesn't cut it for them. What I need is quick easy ways to Jaz up veg to make it more exiting

A few ideas:

Gratin - in cheesy sauce with breadcrumbs on top - works with any root veg like parsnip , carrot, swede, squash

Spinach pesto sauce for pasta

Stir fry greens with garlic and chilli

Roast vegetables - onion, garlic, peppers, tomatoes

Mix sweet potato and carrots together as a mash

Toss steamed broccoli or sugar snap peas in fried garlic and chilli

Grill oyster and shiitake mushrooms then flash fry in lemon juice and black pepper

Glaze parsnips with maple syrup and roast

Those are a few of my favourites

There are some good suggestions in "Cook with Jamie" by Jamie Oliver. It has the different veg and ways of presenting/serving them.

roast mixed veg. ie root veg such as tats, parsnip, carrots etc plus onions and whole garlic still in skin, chopped into bite sized pieces, tossed in olive oil and seasoned. t

takes 20 mins or so in oven til cooked.

broccoli and cauliflower cheese gratin.

green veg risotto. peas, leeks, broccoli, mange tout.

peas cooked with bacon and stock.

Gratin sounds good, as does the mash as DS will do some mixed root mash but usually with lamb andante gravy smothered on top.

Roast veg plain is a no no with ds but if I add another flavour he will try.

Another thing DS likes spice dp not so much

Also yes to stir fry greens with chilli / garlic, the only way DS will eat cabbage and like it!

Mashed swede and carrot to top shepherds pie instead of mash.

Honey baked carrots and parsnips

Brussels but you cut the bottoms off and shred them Into leafs, pan fry in a little butter and add crispy bacon and a dash of pepper.

Bubble n squeak use boiled potatoes, cabbage, carrot, Brussels, parsnips. I use left overs from a roast have to make extra

In the slow cooker - I put tinned toms, chilli flakes, diced red and yellow peppers, sliced courgettes. Sort if ratatouille.

Blitz a cauliflower and then pan fry with cumin or paprika

Cauliflower and broccoli cheese with bacon and cherry toms on top for grilling or baking.

Roast baby carrots and beetroot. Sprinkle with feta when it comes out of the oven.

anything green stir fries well with soy sauce, seseame oil nd toasted sesame seeds.

Leeks are great in pesto pasta.

Everything above. Also ratatouille - aubergine, courgette, onion, tinned tomatoes, few herbs, drop of stock. Very tasty with brown rice.

Roast cauliflower - break into small florets, toss with olive oil and lemon juice and roast until turning a bit brown and caramelised. Nothing like the stinky, soggy stuff of my childhood!
