How do I make a (low fat) Chilli Con Carny?

Recipes please!!!!

And any othe low fat ideas would be great. I'm doing weight watchers and seem to be eating the same things all the time!

pound of lean mince .. brown it in a saucepan and strain off the fat .. crumble a beef stock cube into it and a crushed garlic clove .. add a couple of teaspoons of water and chopped onion (simmer for about 5 minutes)

then add 1 can of kidney beans in chilli sauce
1 can of chopped tomatoes
1 small chopped pepper (green best)

sprinkle of chilli
couple of tbsp of cumin

simmer for about 30 minutes

.. should be roughly 8oz = 4pts (excluding rice)

I get pre-packed noodles (batchelors in chicken) and make them up in a pan

a pack of stir fry vegetables in another pan (use low-fat cooking spray) .. add some chinese 5 spice and soy sauce

cook both for 3 or 4 minutes

tip noodles into stir fry and mix then eat

3.5 points and huge

(I like won ton soup from chinese supermarket better than batchelors .. it makes more of a noodle soup a la wagamamas)

what do you like? its easy to change most stuff to weightwatchers versions

half a point a bowl minestrone soup (thick and lovely)

oh also, how much is a sprikle of chilli? I'm not too fond of spicy food and I'll probably end up making it way too hot!

you caould also reduce the amount of mince and put in some aked beans, I think baked beans are lower in fat than mince

Unfortunalty we are meat lovers in this house and I've only recently started cooking from scratch so a total novice.

I used to cook things like chicken curry, spag bol, chilli etc etc etc all using jars of sauce. I've started trying to make things from scratch - it's also very handy as I'm currently weaning ds and it means I can give him what we eat!

I love pasta but have to stay clear of it whilst doing ww - I can't seem to get a low fat option.

We genrally eat meat in a sauce with pasta or rice - or meat in sauce with veg.

if you don't like spicy foods .. leave the chilli out .. should still be tasty but not spicy

you could add 2 tins of kidney beans in chilli sauce (same point count as baked beans)

Here's what I do, but I made it up so quantities are generally as much as I feel like!

Bown some lean mince, onions and a red pepper in a large saucepan (no need for oil - the meat stops the veg sticking). Add seasoning, chilli powder, tin of tomatoes, maybe a squirt of puree, few gravy granules. Stir & simmer for 20 minutes. 5 minutes or so from end of cooking time add a can of kidney beans, some cooked sweetcorn (optional) and, if it looks a bit watery, some cornflour made up with a little water. Serve with rice and sour cream or a jacket potato.

I don't mind a bit of chilli and dh would prefer it - just don't want to put too much in! Would a teaspoon be enough?

chicken curry

um

brown chicken pieces

add chopped onion and a couple of tbsps of water and cook for 5 mins till softened .. sprinkly on chicken stock cube

add garlic clove crushed, some curry powder and a tin of tomatoes, some tomato puree

mushrooms .. possibly brocolli florets too

simmer for 30 minutes or so

add about 2 tsps of garam masala (spice) at end

keep doing this today! start replying to an empty thread and, by the time I'm finished, a million people have already replied! I forgot to say garlic btw. if you don't like it spicy, just start with, maybe 1/4 teaspoon chilli. Taste it after 10 minutes and add more if needed.

for pasta .. use spaghetti rather than smaller pieces .. it seems to give you more per weight

A good tip for cooking lean meat such as chicken for a curry/casserole is to "fry" some onion/garlic in a little stock ie no fat or oil -& then add the chicken & it cooks very nicely.

Make your own pasta sauce too -
1 onion, finely chopped
1/2 cup white wine (optional)
1 tin tomatoes
1/2 cup veg, chicken or beef stock
1 tbsp tomato puree
Pinch mixed herbs or fresh chopped basil/parsley
Salt & pepper to season

Tiny splash of olive oil & gently saute onion.
Add wine if using & reduce till wine almost all gone
Add tomatoes, stock & tomato puree. Add herbs & season to taste. Simmer gently for 10 mins.

I also chuck in some chopped peppers, mushrooms or courgette.

Veg kebabs? Chunks of corn cob, peppers, onions, mushrooms, courgette on a skewer & grilled?
Grilled chicken pitta breads - er..grill your chicken (maybe spread with dijon mustard or wholegrain), pop in a wholemeal pitta with some lovely salad.
