Veg main course for 15 people...

I have to provide a veggy option for a party for my stepdad's birthday. He, and my Mum, are major foodies. I want something that can be done in advance with minimal stress around the time of the actual lunch... A swanky veg lasagne? Or any other ideas...? If a child would eat it, even better, but they can always subsist on salad and bread for the day if necessary!!

Wild mushroom risotto? Easy to make in one massive pot then.

Lots of shiitake mushrooms on top, parsnip crisps also for added texture

Please don't do mushroom risotto/stroganoff. As a veggie it's all I get offered.

Watching with interest. I'm having a supper/dinner party for ten in a couple of weeks which includes two vegetarians and I am really uninspired about what to cook. I was thinking of doing one meat lasagne and one vegetarian lasagne for main courses but that seems quite boring and in exciting.

Risottos need a lot of attention don't they?

What about something like an asparagus tart, or vegetarian quiche OP? You could make two to serve 15 people.

It's a lunch thing, sit-down. Family, so relatively informal, but also a special occasion. They eat vegetarian a fair bit, though they aren't, so I would like to do something a bit interesting...

For lunch, I'd do either a big veggie tagine with cous cous, nice bread and lots of lovely salads OR a couple of big quiches, with lots of new potatoes, nice bread and lovely salads. Trifle for pud!

A cannelloni, aubergine bake or stuffed conchiglioni would be a good alternative to lasagne and could be prepared in advance and bunged in the oven to reheat. They look nicer in individual ramekins if you have them.
You could make mini, individual quiches and serve with roast or new potatoes and a couple of salads.

Everyone always went mad for a veg lasagne that I used to do at parties, which was i think a Delia recipe, and it was a spinach, pine nut & 3 cheese version. Twas yum....off to look for recipe.

caramelised onion and mushroom 'stew' is fab.

or yottam ottolenghi's sweetcorn polenta with aubergine sauce is outstanding and so easy.

I use frozen sweet corn and miss out the whole bubbling on the stove step. just make sure you really really puree the sweetcorn.

I've served it to customers and they have raved about it.

spanish omelette - do a big one with pimentos and red onion and stuff and then serve cold sliced into wedges

or groovy bruschetta

or stuffed peppers - prepare fully into a baking tin in advance and then just 20 mins to heat through : lay out a grid of red and green and yellow so it looks amazing when served

Flowerface when do you need it by? I have the Avoca Cookbook, the original one. The recipes are mostly veggie and amazing! Their restaurants/cafes are in Ireland, always full, and mostly veg food. I could send you some copies of the recipes?

With some salads and bread. Should cover all ages and preferences

Risotto is a big no no for large amounts, if you want it to be stress free.

aubergine cheesecake is great , but a bit of faff. but if you do it in advance its easy peasy.

Also yotams cauliflower cake. sounds grim, but its absolutely lush.

Or I'd probably go with couscous tbh...halloumi or feta with piles of lovely roast veg and maybe some chickpeas Pittas/salad/dressings to serve

Slices well, can be made in advance and then popped in the oven on the day. Use as a Christmas veggie option and it is delicious.Smile

Just watch with cheese though as ones like Parmasen aren't veggie friendly.
