can i use eating apples (eg Pink Lady) instead of Bramley apples in a fairy cake recipe?

I only have Pink Lady after not checking the recipe properl as usual. I'd really like to have made these ready for fil coming round tomorrow and i won't get to the shops before then. it's acenbride's recipe, originally Delia's i think. Would it be too sweet with Pink Ladies??

should be fine - I would leave out a couple of oz of sugar.

the texture maybe a little different too,Bramleys keep their shape better.

I often use eating apples in cakes instead of cookers - have never had a problem. As KBear says, leave out a little of the sugar though.

www i have zero intuition when it comes to kitchen matters. truly. i can just about follow a recipe, but often mess things up by reading on ahead too quickly/missing bits out/misreading it altogether. telling me to leave out some sugar makes me feel nervous . i'll see if i can zip to the shop in the morning.

Honestly, if you follow the recipe but just reduce the sugar by an ounce you'll be fine.

www you were right; reduced amount of sugar by about an ounce and the sweetness was just right. However, they were very dry - even dh agreed they were - so they're now in the bin. the recipe did say if the mixture's dry then to add the juice of the orange, which i did, but it didn't have much effect overall and i didn't know what else to do (i know this must make for exasperating reading for those with some kitchen ability). i'm determined to make these blasted things for fil so am going to try again. can someone suggest what i add to the mixture to make it wetter? a bit of milk?
