German cookie (Biscuits)/Stollen/Strudel recipes please

My mum was brought up by her grandmother who was German for part of her life.

she remembers German spiced cookies/biscuits with icing hanging on Christmas tree (with lighted candles in holders, AARRGGH!) and otherwise.

I've seen and we had Liebkuchen (the soft gingerbread cookies) that you can buy in supermarket but does anyone know or have any ideas for these ones?

also Stollen recipes and strudel? I can't STAND Stollen or Strudel but my mum loves both and thought as won't see her much for Christmas (will be in Barcelona) would bake for special treat.

There's a section on Christmas food from other countries in the new good food magazine. There was definitely some cinnamon / spiced biscuits. And stollen I think. They usually put the recipes online but not until after the magazines been out.

Rachel Allen's stollen recipe is very good, easy and reliable.It's in Her Bake book, can't find online though.

I've made pffeffernusse a couple of times from recipes on allrecipes.com but they were tricky, really sticky dough.

Strudel is the easiest easiest thing to make, as taught to me by real Austrian people when I lived in Austria:

Roll a sheet of ready rolled puff pastry a bit flatter and put it on a clean tea towel on greaseproof paper
Peel and thinly slide a load of apples (don't have to be cooking apples)
Cover about 2/3 of the pastry with thin slices of apple
Shake over some raisins/sultanas
Shake over generous helping of soft light brown sugar
Shake over breadcrumbs (I buy them but you can do your own)
Skae over a dusting of ground cinammon (can be quite generous if you like it)
Butter and eggwash the sides of the pastry
Roll the 2/3 of 'covered' pastry on top of itself (so it's double layered, and then use the final 1/3 as a flap to seal
Roll it off the teatowel onto the graseproof paper
BUtter & eggwash the top
Put in oven
Serve with 'Schlag' (whipped cream with sugar and a bit of vanilla essence in it

I don't have quantities as it's always a bit more rustic than e.g. making a cake. Just look at the size of the pastry sheet and use your judgement!

I had thought strudel was bloody hard but now will try it.

Thank god my mum doesn't love the rollmop herrings (boak) her continental dad loved!

have a look at lidl, it's full of lovely german lebkuchen (soft gingerbread mostly covered in chocolate) spekulazius, stollen...

Ooh I know someone who has tons of biscuit recipes, might take a bit of time to get them though as they are all paper copies and she's not local. Spekulatius, date rolls, Zimtsterne, Nusskringel,.... There are some similar ones on this link though!
