Veggie batch cook and freeze recipes please!

Going back to work next week (sob) and I want to get organised!

I've done a 9 veg pie filling, ready to be defrosted and have some ready rolled puff pastry thrown on the top and a veggie sausage and bean stew.

I could do with some more ideas please!

I'm rubbish at this, but I always do veggie lasagne and chilli. Broth could work too? I'm basically here just to see what else everyone else suggests!

Thanks! I was wondering how well a lentil and vegetable casserole would freeze? Any idea?

I've frozen it before. Was fine! Dumplings (vegetarian ones) didn't freeze very well though.

Avoiding cheesey things as my mum doesn't eat it and I'm catering for her too.

I love a good moussaka though!

And I normally do the kids a mac and cheese, so I could do them one too! Great idea! Thanks!

X post! Love the look of that curry. I normally make a bog standard veggie curry, but I've been on the look out for be with coconut milk, so thank again!

I hace just sorted the freezer out to see how much room I have and I've found 2 portions of frozen daal! And 2 portions of carrot and coriander soup.

They are probably lunch sized.

Which reminds me, I need lunch ideas. Tabbouleh, cous cous salad and my staple lunches don't freeze well.

Keep some pittas in the freezer. When you want an easy lunch, take pittas out for an hour or so to defrost. Top with red pesto, onion, thinly sliced peppers and / or mushrooms and cheese then shove in the oven until golden.

I could make those in advance and take them to work and bung them in the stinky, never been cleaned usually full of fish finger juiceshared oven.
