Cakes or bics which have nuts but not peanuts?

My son has been diagnosed with a severe peanut allergy. We've been advised that it would be a good idea to make sure he has other nuts (none of which he's allergic to!) in his diet so he doesn't develop intolerance to other nuts. He's only 3 so won't eat a nut just as it comes so recipes for cakes/buns/bics that maybe we could make together which have ground nuts in seems like a good way to get him exposed. Bought stuff is a nightmare as it never specifies the nut ...

So, looking through the books I have everything child-friendly like cookies has peanuts in! Has anyone got any recommendations for sites/books that are good or recipes of their own they could share?

No recipe, but I wondered whether pistachios are okay for your ds? I only say this because my ds used to eat these just as they were and I'd buy the ones that are with the cooking ingredients, so shelled and unsalted and in little bags.

The other thing I'd suggest is trying the peanut recipe, but substituting the nut. (Maybe do half quantities in case they taste foul!)

Try googling recipes for Gluten free almond cakes - they'd do the trick.

Don't forget you could include some cashew nut butter in his diet. I'm sure there are other nut butters out there.

There's also almond butter.

You can use walnuts or pecan nuts in carrot cake, chocolate chip cookies instead of peanuts. Also, flapjacks are good for getting in chopped nuts.

Rosina Copper I will give him a try on pistachios and see if he likes the idea (bit hit and miss with a toddler on new things!)

Like the idea of switching the nut - not sure if peanuts are more/less oily than some nuts but definitely worth trying.

Hadn't thought of nut butter either ... top tips!

Nigella's easy almond cake is lovely (and keeps for a few days) I don't have the kind of tin she specifies, I just use a normal loose-bottomed cake tin.

Loads of recipes have ground almonds in them.

Almond butter is lovely and very easy to,make if you have some kind of processor... Blanch the almonds, pop them out of their skins (I get the kids to do this; they love it). Toast them if you like, or not, then whizz them in the processor. Keep whizzing until you get the texture you want. You can add salt if you like, but I don't, and a little oil whizzed in if you want a looser consistency Smile

This is one of my favourite cakes ever (and so, so easy):

Date & Walnut Cake

250g butter
2 eggs
2 cups self raising flour
2 cups chopped dates
2 cups chopped walnuts
2 cups brown sugar
2 teasps vanilla essence

Melt butter and sugar in saucepan. Remove from stove and stir in nuts, dates, flour and beaten egg. Bake for 45 mins at 180C
