Anyone like a challenge?

I need to cater an evening meal for 10 people. I will have proper cooking facilities but not my own. I will be out all day, so ideally it needs to be something I can prepare/freeze at home a few days beforehand and transport to heat up on the evening.

To feed 10, needs to be healthy enough to satisfy my slightly obsessive DSis's ideas of what her young Dc should eat, no rice or pasta or my Mum won't eat it, not fish or Dh will turn his nose up and not "messy" (no sauce) or DS2 won't eat it. If it comes to it I'll take sausages for DS2 but DSis won't approve of him being "pandered" to. Neither do I really, but on holiday I take a practical view!

Oh and I need a sugar free dessert for BIL but could just give him cheese and do something scrummy for everyone else, somehow he's allowed to be pandered to Grin (no health issues, he's just decided to go sugar free)

I'd do something like spanish chicken with roast baby potatoes. You could cook the chicken separate to the sauce so that non sauce child can have it dry. Sauce can be prepared and frozen in advance. Cook spuds in advance, just warm through.

Ah, good thinking, Do you have a recipe please?

Well, my default is lasagne, but that won't suit your Mum.
Would DS2 eat shepherds pie?

Chicken thighs / drumsticks in BBQ sauce? I've had a lovely dish like this that had new potatoes in there also.

How unmessy does DS2 need?

Jacket potatoes with various fillings?

We've done jelly for puds in the past - diabetics got sugar free jelly in an individual pot, and everyone else got proper jelly. We even made it stripy, and everyone enjoyed it, even if we did get raised eyebrows when it came out!

What do you normally eat that DS2 will consume, that doesn't involve rice or pasta?

timidviper · 12/10/2013 18:08

Good idea. Chicken portions, onions, peppers and baby potatoes tossed in oil, sprinkled with seasoning, herbs, etc and roasted.

Sugarfree desserts are difficult, how sugarfree? Does he eat fruit based things? You could do a nice pud and a fresh fruit salad so he has an option if he does

DS2 basically needs plain - no sauce, no mince mixed with veg, so no not, shepherd's pie.

DS2 does best with roast/meat/fish & 2 veg type meals, but that's hard work for 10 people! He does love rice and pasta and would eat something like paella, but Mum and DH won't... At home if it's bolognaise or similar I give him plain pasta with cheese and peas or tuna Blush

I have taken to roasting potatoes and onions around things like chicken pieces or lamb chops drizzled with oil and seasoned all in one tin covered in foil when I am in a hurry and can't be bothered. - would something like that work then you just need to steam some fresh veggies and and if you felt the need a sauce that can be added at will to the meat?

nextphase · 12/10/2013 19:43

OK, I think most freezable things won't suit DS2.
So, your down to a one dish oven things, prob with potatoes, as I suspect couscous etc will also be out for your parents?

Spanish chic as above, lemon chicken - cut it all up the night before, and then sling in the oven when you get in?

Good Luck - Is anyone else catering for all these preferences??

Ineedanewone · 12/10/2013 19:53

Gammon? and take pre chopped veg to roast on site?
Pudding could be pan fried bananas with ginger or mixed spice and clotted dream for the non sugar pain in the neck

Ineedanewone · 12/10/2013 19:54

Obviously cook the gammon at home

gastrognome · 12/10/2013 20:13

I'd make pizza. Nice home made base with olive oil, passata and fresh mozzarella on top. Add some fresh basil and a green salad.
As for dessert, maybe an apple pie using plain pastry, apples, raisins and cinnamon? Then sugar and custard for others to add if needed. Or maybe fruit isn't allowed... In which case I'd just serve him some cheese instead.

I'd do chicken drumsticks , some marinated with a spicy coating some not. Big bowl of coleslaw - I make mine with chipotle paste, mayo and apple cider vinegar, roast potatoes, roast carrots and bread. Easy! Cheese for your bil - you're on holiday fgs!
