Has anybody made tofu icing?

dd2's b'day tomorrow and particularly as she's a bit under the weather I'm trying to avoid sugar and make her cake healthy.

No but I once made my kids jelly out of agar agar and fruit juice. It didn't go down too well, especially with their unsuspecting friends.

However the parsnip cake was a big hit.

I've never heard of tofu icing. Have you had it before then? Is it sweetened with anything? I find ordinary icing horribly sweet. It seems most kids leave it on the plates too.

Apparently you just whizz up tofu (probably silken) with lemon and honey, or vanilla and maple syrup, or agave nectar or something. Actually I was hoping somebody would have a recipe they could recommend; I've only got one packet of tofu so don't want to take any chances.
Spidermama, I used to make jelly with fruit juice and agar agar or vegegel or something and the kids loved it. Must do it again. I tend to buy the vegetarian jelly crystals which are sugary but naturally flavoured/coloured.

Tofu Icing

1 pkg silken tofu, squeezed
2 T honey
1/2 tsp vanilla
a bit of salt
2 T powdered milk
1 1/2 tsp grated lemon rind

Place drained tofu in a clean dishtowel and squeeze and knead for
2-3 minutes to get rid of liquid. Blend and refrigerate.

Thanks spidermama, that's very useful. I'd leave out the milk anyway as I'm a non-dairy type.

Cream cheese and runny honey is lovely, especially if you add a bit of lime juice & zest. Save the tofu for the stir frys, my ds loves that.

Why try to do a 'healthy' version.

Courgette cake is bloody lovely though.

I'm doing a healthy one because dd is 1 tomorrow, not feeling great and better off without loads of sugar.
Incidentally I have a recipe for chocolate and beetroot cake somewhere - made it once and it was surprisingly good.

And I dunno where recipes is.

was also gagging at the thought of parsnip cake with tofu icing.

Birthdays only happen once a year - let her have icing on the cake fgs!

Here it is (original version - I believe I buggeredabout with it a bit to veganise it). Horribly cuppish/metric I'm afraid:
CHOCOLATE BEETROOT MUFFINS
2 large (500g) beetroot
1.75 cups (260g) SR flour
0.3333333cup (35g) cocoa
1 cup (220g) caster sugar
2 eggs, lightly beaten
0.3333333 cup (80ml) veg oil
0.33333333333333 cup (80ml) buttermilk

Grease 12 hole 80ml capacity muffin tin.
Boil beetroot until tender, drain, rinse in cold water, drain and puree. You need 1.333333333 cups (330ml).
Sift dry ingredients into bowl, stir in beetroot and other stuff. Bake in aforementioned tin in moderately hot oven for about 25 minutes.
