All of that sounds very good esp for a two year old. What about fish - does he do fishcakes (can hide vege in those)/fish pie? My two also like just plain salmon with potato of some description - roast or mash. Baked potatoes are also good vehicles for all sorts of stuff. Vege lasagne is good for hiding stuff, (I pile on the cheese sauce!) ditto tomato sauce. What about sausage and bean casserole? Or chilli without the chilli (ie mince and beans)? Chicken casserole with added lentils? One variation on cheesy pasta is cheesy rice - rice with cheese sauce and various additions (peas/tuna/sweetcorn/chopped broccoli, etc). If he likes spag bol he may like lentil spag bol (ie tomato sauce with lentils instead of mince).

My dd, 21m, is also increasinlgy picky and won't tried anything she knows she'll like [sigh]. So I try to add things to those, like bits of carrots to spag bol, peas and fennel to her risotto which she loves. You can add veggies to a home made tom sauce. Soups are great for that but I realise it's not quite the right season. Salads are good as well, if he eats them.
About pulses, you could make a pistou soup, courgettes, green beans and basil are in season. Also a lentil salad, with bits of ham and toms in a lemon juice dressing.

Have you tried using cocunut milk and split red lentils as a base for a mild curry/dahl? My toddler ds (who is also rather picky) loves it - creamy and sweet I suppose. I make it either with lots of chopped veg (onions, leeks, carrots, courgettes, peas - anything really!) or with veg and chicken, and I add a small amount of tumeric, cumin and cinnamon. It freezes well in batches, and we all like it, so makes a family meal.

He also loves home-made chicken and apple burgers and sausage casserole made with passata, chickpeas, aubergines, peppers and courgettes (which again both freeze well). Any good?
