Veggie replacement for chicken in a salad

I'm making a Thai sweet chilli salad with cous cous and garlic flatbreads for a light supper for friends on Thursday.

What would you replace the chicken with to make a vegetarian option?

Haloumi is gorgeous with chilli flavours. Not sure about Thai flavours with cous cous though, tbh. Haloumi would be great with cous cous and flatbreads with some roasted Mediterranean-ish vege.

I'm not a fan of fake meat. What about a really nice tofu. Good shops have marinated ones that don't nee dot be cooked. They are firm like cheese and very Moorish! I also think the cheese idea is a good one.

I would be tempted to go more down the way of Moroccan flavours - lots of lemon, mild spices, coriander with aubergines, marrow or sweet potato. Although it isn't Moroccan cooking perhaps look at Yotam Ottolenghi for some inspiration for flavours/ textures.

link crusted tofu with wakame and lime would go well for example with cous cous but still be sort of thai flavours if thats what you wanted

I think Halloumi it is then! I know the cous cous sounds weird they way I've written it but it didn't explain very well..... It's a pot luck style supper so I'm putting the three dishes separately with the other random contributions iyswim? It is as cous cous salad thing. They aren't intended to complement each other.

Just didn't want to exclude my two veggie friends from the things I've made.

I'm going to make salads in advance and can quickly grill the cheese when everyone arrives.

Only if you like talking too much when you are supposed to be getting on with whatever craft project you are working on. Technically we are a craft group with dinner thrown in but all but one of us are pretty hopeless at the craft bit so we mainly talk, laugh at our efforts, eat and drink wine.
