MIL and food Please reasure me

I am not going mad.
Was cooking tea tonight after DS was at rugby and fab MIL brought him home ended up with a discussion about suitable foods.
I was just wondering what everyone else thought of this meal.
1/4 of a Fritatta with red/yellow peppers, mushrooms, green beans and 2 slices of bacon left over from the weekend, corn on the cob and 2 slices of toasted seeded bread.
I cant see anything wrong with this but Mil was questioning the lack of carbs

she is a bit strange
bread is carbohydrate
veg all have carbs,

Sounds like a great meal to me. Not sure how old your DS is, but I would be very happy if my DS ate that (fussy eater!) And two slices of bread is fine in terms of carbs, surely?! I often put a bit of potato in my frittata/Spanish omlette-type creations. Would that make her happier?

The problem is she is a great cook actually was her career for years but (and its a big but) she prefers shop bought bread and still believes in eating potatoes with everything eg Lasagne and mash, mac/cheese with chips.
DS is 12 and at the moment does a hell of a lot of physical sports and the higher protein I find suits him a lot more Ah well just need to make sure I hide what I am cooking from her :)

Bundaberg in her head homemade bread is not carbs its something you have with carbs.
Coffee tried the potato in it and DS cant stomach it after training, he says its to heavy. Think his stomach muscles are a bit hammered and he finds it hard to digest.

a friend of mine has an older brother who lodged with an older couple while he was doing a college course.
every night they'd serve up dinner, and every night there would be at least 3 different types of potato. weird!

i can't imagine having chips with macaroni cheese! i'd die of carb overload lol

Must admit I have been known to cook 2 types of potato to go with dinner but even I cant stomach pasta with chips or potato's. Would swell up that much I wouldn't fit in my clothes for a week.
What makes it slightly worse is that she isn't even old hasn't hit 60 yet.
