The annual village harvest supper is coming up and I volunteered to make a dessert. It should feed about 8-10 people. I assume there will be many trifles, crumbles and bread and butter pudding so I am looking for some inspiration. Maybe something with fruit (I have loads of frozen berries)? I am stuck.

My standby is bake well tart - you could make one with stewed fruit instead of jam. Or what about a cheesecake?

A syllabub? I'm sure there are berry versions as well as the traditional lemon variety.

Hot Swiss trifle!! You slice up the Swiss roll for trifle sponge, fruit on top (I like pineapple but canned peaches or apricots are also good). Pour custard over and top with meringue. Sprinkle some almonds on top & bake in the oven until the meringue is cooked. Dead easy, a bit different from your average trifle & tastes bloody fabulous! The warm meringue gets all chewy & scrummy & I'm going to have to make one now!

Summer pudding? Just had a really nice Nigel Slater version using brioche and gooseberries and elderflower - it was gorgeous.

Or apple Betty?

Or pumpkin pie?

In this months Sainsburys magazine there is a lemon and raspberry cheesecake, which is served as layers in sundae dishes, the recipe says serves 4, I made it serve 5 at the weekend, if you doubled the quantities you could do it in a big bowl, it's just layers of biscuit crumbs, lemon curd, cream and cheese mixtures and raspberries - blackberries would work just as well. It was delicious and very easy.

I am no good with links but search for BBC Lemon Meringue Ice cream cake. REALLY easy. Make in advance, freeze and defrost for a little while before serving (1/2 - 1 hr). Use premium' lemon curd for best results. I know it's a bit of a cheat but it's very good.

LillyNotOfTheValley · 02/10/2013 04:57

Berry mousse? Mixed with chocolate mousse if you feel adventurous? You should find recipes pretty easily and could alternate layers in a glass bowl

butterandcrumpets · 02/10/2013 07:18

Wow....lots of ideas there. Thank you. Hadn't even thought tiramisu or eton mess. Will read properly later once back from work.
