Beginner chutney maker - can I use old jam jars?

I've got loads and loads of jam/sauce/pesto sort of jars with twist on lids, not kilner style lids. If I sterilise them will they be OK to store home made chutney? Should I put greaseproof paper in the top of the jar or something?

It's quite alright to reuse jam jars and they don't have to be Kilner jars either. It's not necessary to put a greaseproof or a waxed disc in the top of the jar - just fill it nearly to the top with the aim of having the smallest air gap. This is to prevent mould spores in the air spoiling your chutney. Soak the labels off (vinegar and Fairy liquid usually does the trick) or run the jars through the dishwasher. Any residual glue can usually be wiped off with white spirit or vinegar or a pan scourer.

Use plastic coated lids and boil them for about nine minutes. Lids must not have any traces of rust on the inside. Pot the chutney when it's still very hot (warm the jars in the oven) to prevent them cracking. One of these gadgets is handy for filling the jars.

Happy cooking!

On the other hand I always use a waxed disc for a good seal when potting jam.
