help needed with yorkshire pudding

that's it really. i can do good pancakes, but never managed to make yorkshire puddings to look any different . any recipes/ advice much appreciated

plain flour, one egg, little milk and water, salt and pepper then mix together it should be runny but not too watery. then put into hot fat and don't open the oven until they're brown.

The oil has to be hot hot hot - smoking and almost about to burst into flames. Then they will rise and be crispy on the outside, fluffy in the middle and will pop out of the tray!

DP made good yorkshire puddings in our old gas cooker, and bad flat ones when we moved to a house with an electric cooker. i don't know if it's just us but we blame the cooker type.

4oz plain flour
1/2 tsp salt
1-2 eggs (size dependent)
milk (enough to mix to consistency of double cream)

Beat for 10 minutes (or less if you get bored) and let stand for 1 hour.

Heat 3 tablespoons of dripping/lard () until it's HOT HOT HOT! (pmsl Snuffy) You will be able to see a blue smoke coming off it when it is ready.

Gas mark 8 for 30 mins as a slab, or 25 mins for yorkie pattie tins.
