What can I bake three days before a party?

I know this topic has been asked a lot, but most of the replies I've searched through recommend freezing cakes and I don't have the freezer space (plus I need to make large quantities)

What can I bake on wednesday night to be served at a birthday party on saturday that will stay fresh and doesn't need to be frozen?

Is the party for kids or adults? Nigellas gingerbread keeps really well, but its v dark and spicy, maybe not great for kids.
Her devils food cake (un iced) also keeps well for a few days.

Lindy's chocolate fudge cake keeps for at least a week and IMO tastes better after a few days rather than fresh.

Sorry should've added, it's for a childs birthday party but I don't mind suggestions for adult-y bakes too for future reference.

if you cover a cake in icing like sugarpaste it will keep once the cake is completly covered and no air can get to the cake itself iykwim ...

Shortbread cookies keep ages in an air tight tin....maybe decorate with icing night before party. Dd got the most amazing shortbread recipe in home economics past year, will post the recipe if you want.
Good old krispie buns?
Fifteens?
Or, do u have time the night before to whip up a batch of sponge mix and bake it in those little flat bottomed ice cream cones?
Then pipe (or spoon on) cream/buttercream and some sprinkles and a small flake. They look so cute!

Traybakes are good. There are a few on the mumsnet recipe section. We like these ones, www.mumsnet.com/Recipes/i/2190-Rice-Krispie-squares. We added some mini marshmallows and raisins in place of some rice crispies.

Scones and pancakes freeze well.

I was thinking of rice crispie squares too but wouldn't the rice crispies go stale and not stay crispy if made ahead of time?

Chocolate fridge cake. Maderia cake lasts well and easier to make into different shapes. Flapjacks, oat biscuits with skittles & m&ms in though those rarely last more than 10 min in our house

Apparently cupcakes will keep - if you cover the top completely in icing and refrigerate.

Some things you can part make and either fridge or freezer them then finish them off when ready.

For instance pastry freezes well. Profiteroles can be made in advance and popped in fridge and filled on the day.
