Quick and easy satay sauce recipe?

A very simple one please that I can whip up easily to use for DC's chicken satay skewers or similar? I don't want to be faffing around too much crushing things or chopping things...just a few ingredients to chuck together and throw over some meat!

Big spoonful of crunchy peanut butter and a splash of Tabasco. Easy!

Wow a quick chicken satay recipe would be great. My DD loves peanut butter so that would an excellent quicktea full of protein.

If you find a recipe that works can you post it here? I'd be so grateful!

Thank you. I definitely think it need coconut milk and I'm sure that Nigella one is lovely, but there's a fair bit of chopping and crushing going on which I'm not doing for a 'quick' tea for the DC. Might try it for me and DH though Wink

Toowittoowoo, haven't found exactly the quick and easy recipe I'm after, but I did find this on the Good Food website www.bbcgoodfood.com/recipes/851647/chicken-skewers-with-satay-dip

It's meant to be a canape and it's with a satay dip rather than marinade but it ticks the quick and easy boxes so I might try it tonight Smile

I've a very simple tasty one that involves peanut butter, coconut cream (thicker and richer than milk), and a chopped chilli. You can add extra stuff like garlic, ginger etc but I don't bother.

Peanut butter, sweet chilli sauce and soy sauce. Nuke in the microwave.

Also you can get a curry sauce powder mix - Mayflower from Home Bargains, farmfoods etc is good, make up with water then stir in a big glob of PB at the end!

I suppose the difficulty with using coconut cream or milk is that you'll open a packet or tin and waste the vast majority if it is only for DCs.

You know those blocks of coconut cream that you disolve in milk - how long do you reckon one of them would keep once open? If I could cut the right amount off disolve it and the keep the rest in the fridge for next time then would be more cost effective.

Let me know how you get on with the recipe coffee. I think it is a great idea.

Toowit, I actually saw a recipe that was just peanut butter and soy sauce but found it way too salty and not that tasty! That's why I reckon it needs the sweetness of the coconut milk. Didn't end up doing the satay last night but will let you know how it turns out!

EeyoreIsh and *KatoPotato, thank you. I will try these suggestions. Or maybe combine your two recipes...peanut butter, coconut milk/cream, chilli or sweet chilli sauce and soy sauce.

Did the canape satay recipe tonight. The chicken - just marinaded in soy sauce and sweet chilli sauce - was really tasty. The dip wasn't right (way too thick for a dip) so I adjusted it a bit - I used 2 tbsp of peanut butter, 4 tbsp of coconut, 1 tbsp of sweet chilli sauce and a splash of soy and it was ok. Still not exactly the lovely satay sauce I was after, but dipping the chicken in it, I thought it was quite tasty.

DC weren't in complete agreement though Sad. DS (almost 5) ate the chicken but didn't like the satay dip; DD (15 months) ate fistfuls of the satay sauce but spat out the chicken!

And so the search for something they both like continues....
