Freezing Veg

My dh buys a lot of fresh vegetables (carrots, spinach, beetroot, celery, broccoli etc) for juicing purposes but tends to waste most of it, the fact that fruit and veg is so short dated definitely does not help matters.
Anyway it is usually me that ends up throwing it out the fridge after its past its sell by date or looks off. I hate the wastage, the waste of money and how it ends up filling the bin!

I have decided that if this continues I will start freezing the veg before it reaches its sell by date. Now is it as simple as taking veg out of the fridge, washing n chopping it, putting in airtight containers and using within like 6 months? Or does the freezing have to be done straight after purchasing, then par boiling the veg , cooling and then freezing? A friend mentioned about the par boiling. I am willing to if thats what will help preserve the veg.

I blanch veg before freezing. Prepare the veg, plunge it into boiling water for a minute or so and then drain and into cold water to stop the cooking process.

Freeze on open trays if possible and then bag once frozen.

Brilliant thank you! Btw though frozen, will the veg go off if not blanched first?

the texture isn't quite right if it isn't blanched first.
