Ooh, if you are not an a no fry thingy, they make excellent home made crisps!

sandradee · 23/06/2006 13:16

Very good for you

Dice 'em up, put 'em on a baking tray, drizzle with oil and sprinkle with salt, pepper and loads of rosemary.

Yum

I boil them with carots then poor the water away, season with salt and peper and mash. Thay are lovely with roast dinner.

colditz · 23/06/2006 14:02

they make stunning chips.

Surfermum · 23/06/2006 14:13

I've substituted them for real chips as I'm doing Slimming World. They're nice mashed and put on shepherd's pie. I also oven roast sweet potato, courgette and carrot with a spray of oil and some herbs and serve it with a chicken breast or pork steak marinated in hoisin sauce.

Sweet Potato and chick pea curry is dead quick and packed with anti-oxidants, a good lean source of protein and super low GI.

1 tsp olive oil
1 onion (finely diced)
1 clove garlic
1 medium / large sweet pot (cut into bite size cubes)
1/2 - 2tsp curry powder depending on how much your kids will tolerate
2 tsp low salt Bouillon powder (Marigold is best)
2 tbsp tomato puree (optional)
1 can chickpeas - no salt or sugar
2 tbsp ground almonds
1/2 pt water

(serves 2 adults and 2 toddlers)

Heat the oil in a deep frying pan and fry the garlic and onion for 2 mins
Add the curry powder and cook until the onion softens
Add the sweet pot cubes
Pour in the water and add bouillon powder & tomato puree - put a lid on the pan and cook for up to 10 mins until the sweet pots have softened
Add chickpeas and almonds, simmer and stir for a min or so until it thickens.

My dd loves to eat this with chappatis and her fingers.

Good one for the end of the shopping week when you look in the fridge and all you have is an onion and a sweet potato
