Barbeque ideas.....

We are having about 16-20 people over tomorrow night for a BBQ (keep your fingers crossed for good weather). I am bored of the usual culprits (chops/chicken drumsticks/sausages etc), and was wondering if any of you culinary whizzes have some more upmarket ideas for BBQ food, possibly fish/haloumi cheese? TIA

my neighbour is great at barbies and does this cheats chicken thing - he gets breasts of chicken and a jar of tikka sauce and a paintbrush

puts breasts on barbie for a while, then about halfway done paints the sauce on

I think upmarket was probably a poor choice of wording tbh, what I meant by that was more something a little bit different rather than simply slapping on a few sausages and burgers IYSWIM.

take some large feild mushrooms, remove caps, put in a dollop of cream cheese and top with passata and herbs...mmmmmm.

Veggie kebabs go down well too - chunks of corn, courgette, button mushrooms, onion & pepper - makes a nice change from all the meaty stuff

We're having a bbq this weekend. Dh is good at them and here's an Ainsleys marinade that he does for chicken wings;
1 tbsp vegetable oil
1 small onion, very finely chopped
2 garlic cloves, crushed
2 tbsp clear honey
4 tbsp tomato ketchup
4 tbsp Worcestershire sauce
2 tsp English mustard
2 tsp Tabasco sauce

We are also having a spicy lamb mince thing on skewers (bit like shish koftas from the kebab shop) and veg skewers too (might do spicy drumsticks too). Will be serving up with pitta breads, salads, raita and chilli sauce.

We once went to a bbq where they served up ciabatta with tomatoes and mozzarella sandwiches on the bbq. They were fantastic.

I've done halloumi cheese on a barbecue - there is a recipe in Delia Smith's Summer Collection. It tastes brilliant, but I would advise you to put some foil on the barbecue and lay the halloumi kebabs on top, because otherwise they stick to the barbecue grille

You can also wrap salmon in foil with a bit of olive oil/lemon juice/white wine/herbs and put that on the barbecue. It works very well.

mmmm definately agree about the halloumi we had it at a BBQ on Sunday and it was lovely.

What about racks of lamb? Also fish is nice baked over a BBQ.

Brazil is BBQ country and we go to one at least once to a week! The thing everyone does here is to put a BIG joint of meat on the barbie, having marinated it over night in onion/vinegar/salt. Then just carve off slices as it cooks. Cheese kebabs are also really popular, don't know what the cheese is called in English though, just stuff a long cube shape piece on a skewer and put on the barbie rack - yum! I have never had burgers, chops or chicken at a BBQ here I quite miss English barbies, what with the rain and everything!

Albert, we did a lamb like that for our BBQ and it was great. Cheaper in the long run as well because I find the usual BBQ food has so much waste. Better to have a proper "meal" as opposed to a little bit of this and that.

fresh sardines are lovely on the bbq if you are using proper coal and firelighters... sprinkle a little sea salt on them and when they come off just squeese a little lemon.

or chicken breasts marrinated in milk for a few hours (makes the chicken extra soft and juicy when cooked)then seasoned how you please... (brushed with sweet chilli sauce or just blck pepper and salt etc etc)

also if you wanted you could put oregano and salt on your lamb chunks and have lamb kebabs...

I agree re the salmon, sooo easy (just olive oil and black pepper).

Monkfish was lovely but expensive for that amount of people.

Veg cut and griddled is good also, don't forget sweetcorn.. also easy.

I found that with a good joint of meat or fish you don't really need any bbq sauce etc. just good flavour from the meat.

I love mackeral on the BBQ (preferably fresh from the loch but not many of those in SE London)!

I marinade chicken in tandoori paste (Pataks, just add natural yoghurt)then put on skewers

Peppers, mush, onions on skewers, brush with oil, salt and pepper

DH is doing a BBQ for 25 people in August and this is the menu:
