Can i freeze Roasted Veg?+?s

Trying to plan dinners and what i can do now cooking for one.

I like roasted veg and was thinking i could batch make them defrost in packs then pack them into a pitta or sandwhich with hummous. Would they be soggy? or would they work ok?

try this - lightly steam the veg so that they are still a bit crisp - then let cool and freeze - that way you can still defrost and roast and maybe avoid the whole soggy thing.
The other thing I was thinking for you is to buy in bulk,(2 for 1 etc) but if you can shop in the evening you will find that the grocery stores discount stuff that is about to expire it's "shelf life date" - it can be up to half off, so buy that and then freeze - it's absolutely fine -
But, just for your info, I am one of those people who pretty much ignores the "use by" dates - drives DH up the wall!

dO YOU NOT HAVE TO precook the stuff or do you get a cabbage as literally stuff it in the fridge? Already look out for cheap stuff like celery when it goes down in price and will buy more.

Don't have to precook any veg - just thought it mught be a way to avoid the soogy issue if you particularly wanted to roast the veg- sorry, didn't mean to confuse.
