Anybody else ever tasted Essene bread? (ancient form of uncooked bread)

Just bought some from the health food shop thinking it was rye bread. Turns out its an ancient kind of bread made from sprouted grains and water (no yeast or rising agent) and not even cooked. It's pretty incredible as it tastes like a dark (German style) bread.
Anybody else heard of it? Had no idea it even existed!

I have but didn't like it much, too heavy for me. Maybe it's nicer if you make it at home, mine was at a vegan cafe and had an odd rubbery texture.

I love dark rye bread so I liked the texture. Not rubbery though. Just compact.

Was looking into sprouted grain bread just yesterday, not sure if the intense texture of essene would work with the dcs but I intend to try out sprouted grain bread using yeast very soon...would be interested in recipes or advice before I start experimenting.

One of the loaves I bought yesterday has dates and almonds added. The sweetness and crunch are nice additions I think. The other loaf is plain rye - more of a traditional dark bread flavour.

Have been reading more about it and it seems that the bread may be cooked at a very low temperature, or eaten raw. Seems to depend on the recipe.
