A vegetarian is coming to dinner tonight! What do I cook?

If in doubt I usually roll out fajitas or steak. But with a vegetarian it's a bit trickier. Althought I've got loads of times to go and buy good stuff this afternoon I'll have about 20 minutes preparation time after putting the kids to bed! Eek help!

Stuffed red peppers and a salad.
Yum.
I like mine stuffed with onion, tomato, herbs mozzerala or feta etc rather than breadcrumbs and rice and stuff.

You can prepare them early and then shove in oven drizzles in olive oil when they arrive.

Could serve with huge portabello mushrooms, drizzled with chopped up garlic and dotted with butter.

we had fab meal at a veggie's house the other day - pan-fried tuna (in a garlic and chilli oil) on a bed of rocket and avocado - it literally takes minutes to make

for starters it was some sort of potato quiche thing (cold)

Long term vegetarians often don't like quorn as it has the texture of meat, if that helps! I'd do a roast veg thing, and strawberries. On separate plates!

Vegetarian fajitas are lovely - either use roasted veggies- peppers, red onion, courgettes, garlic, aubergine etc, or use quorn pieces, and prepare just like chicken. Really delicious.

Your friend is not veggie if she eats fish, foxinsocks.

Veggie fajitas with roasted peppers, aubergine, courgette, mushrooms etc would be lovely. I would really enjoy that and be impressed if a meat-eating friend made that for me instead of usual pasta / quiche things.

well she calls herself a veggie (but I know by definition she's a pesco-vegetarian or whatever it is)

most veggies we know seem to adapt what they eat (none of them eat meat but some eat fish/dairy products/eggs)

How about spanish omelete? Fry potatoes cut in cubes and chopped onion, after about 10 minutes add crashed garlic, chopped courgette, sliced mushrooms, chopped red peper, transfer to buttered oven proof dish, add 5eggs which you mixed well with 150ml of milk and seasoned with salt and peper, put in the oven gas mark 6 for 40 minutes. Serve with green salad with your favourite dressing. i use 5 tb spoons of olive oil, 2 tb spoons of lemon, half a teaspoon of grany mustard, a bit of brown sugar, salt and peper.
