Using silicone train shaped cake tin

In a fit of enthusiasm I bought one of these for DD's birthday cake this year.

Can anyone recommend a good sponge recipe for these? I wonder if a heavier madeira cake type mix will turn out better than a light sponge? Do I have to use that baking spray to help with unmoulding?

I also have a dream [hmmm] of dipping all the parts into icing (fondant fancy style) before decorating, but all the pictures I can find show just the plain cake with piped icing/sweets. Am I bonkers for even considering this?

Hi Daisy I def recommend the baking release spray, Bake Easy or similar. I've done shaped cakes with normal sponge recipe but i know nigella recommends a buttermilk mixture i think i saw it in her Domestic Goddess book, apparently it holds its shape better. Good luck, bet it'll look great Smile

I made similar with a wilton tin. Definitely use cake release spray!
I found making chocolate madeira and using chocolate buttercream to stick sweets on and cover any air holes worked well.
Yes you're bonkers, never again! til next year
