Chicken nuggets - since that famous scene with Jamie Oliver putting the arse end of a chicken in a blender and announcing that these are the constituent ingredients of chicken nuggets, I've been making home made chicken nuggets.

My scarily daring question is - having now seen on the packing of chicken dippers "Now made from 100% breast meat" are chicken dippers respectable again?

Burgers - again, anything wrong with the better quality shop bought burgers which specify made from 100% beef? - or is there a good reason to have to slavishly continue with making my own?

It's the thought of 85 chickens or cows in a mashed up thing that freaks me.
Also bear in mind that a bollock or an ear is 100% beef.

I think anything home made is always going to be better than bought. apart from anything else, you can hide veg (eg blended carrot) in home made burgers.

but in answer to your question, there's not actually anything wrong with mechanically recovered meat. it doesn't taste as nice as the real stuff but there's nothing wrong with it. what's wrong with chicken twizzlers and the like is the amount on non-meat fillers and e numbers in them, imo. check the packet (becaring in mind that antioxidants are usually OK cos it's vitamin c).

but yes, if you're squeamish about chicken arses I won't tell you what 100% beef" can include...

I sometimes buy local butcher's burgers then re-fashion them into mini meatballs

Sometimes there just aren't enough hours in the day.

I do make my own chicken nuggets though as prefer the crushed cornflakes as a crispy coating. Yum.

home made meatballs are the best though. the trick (and with burgers) is to add lard or pork mince. most mince is too lean.

but you know - a bit of everything does you good. shop bought is OK

Ok - how do you 'make' beef-burgers then?

We only have them when we have BBQ (so that would be about twice a year then!!) but DD has discovered she likes them. Which is good, because she won't eat much meat otherwise.

Anyone out there with a foolproof recipe for a pretty cr**p cook!!

lots of salt - bad; lots of additives - bad; too much fat - bad; but if we're going to kill animals I personally think we owe them the decency of making the most of them; and if mashed up cow's ear or chicken bum tastes ok I actually think its pretty pathetic 21st century decadence to be squemish about eating it.

MIL used buy half a pig down Smithfields/Spitalfields whichever one it is, and make her own 100% pork mince, she'd mince everything. Tasted Ok though, I think we get a bit squeamish about which bits of the animal we eat really. I'd be more worried about salt and additives than the meat. Dh always eats the cartiledge off of chicken legs (bleurgh at gross crunching sounds) because that's what he grew up doing, couldn't do it myself, but it doesn't do him any harm.

home made burgers dead easy.
mix up some lean mince, with finely chopped onion, seasoning, beaten egg, then shape the burgers and slap under the grill/on bbq

yes you must have breadcrumbs. they also hold some of the fat in so make the burgers juicier. especially important in meatballs.
