Making and freezing sandwiches for the week ahead

So, I'm sure I've read that some people make sandwiches on a Sunday for all the family, for the next 5 days and freeze them? Taking them out the night before? But surely the bread would get soggy? What do you put in them? Is there anything I can't use?

We're about to adjust to two parents working full time and I want to do as much as I can to organise in advance. But don't know if this is a step too far or not?

Cheese sandwiches freeze well, as do cold meat sarnies. Avoid anything eggy or with mayonnaise. Just take them out of the freezer the night before to be certain that they will defrost thoroughly before lunchtime. Don't leave them in clingfilm while they defrost or they WILL go soggy. A paper bag works well, or wrap them in greaseproof or kitchen paper Smile

And they stay fresher if you freeze them rather than keep them in the fridge, as putting bread in the fridge dries it out.

I tend to put cucumber sticks in a pot and the DCs can put them into the sandwich if they want a bit more texture.

I take them out in the morning, they de-frost by lunchtime.

I've not tried it myself, but a former colleague always did this. Made a weeks worth on Sunday, froze them and took one a day out.
I do sometimes freeze packets of ham and they are fine, so I reckon sandwiches with this would be ok. Agree with mrpremise - egg doesn't freeze well and would also avoid anything that had already been frozen or shellfish - like prawns.
