Two adults and 15mo to feed. Two adults like different things (normally when I say that was yum DH says "nah not too keen!")
He hates cheese, tomatoes, potatoes except chips, salad and vegetables except peppers, carrots, onions and peas, shellfish, tuna or salmon. He isn't too keen on pasta.
I hate chewy meat, fishy fish, spicy food, cream, butter and not too keen on cheese. Iam not too keen on rice.

Our favourites are meatballs, turkey enchiladas and sticky chicken kebabs. On other night we tend to have different things (eg DH chicken tikka and rice me chicken salad and crusty bread, DS will eat some of both things luckily!)

Can anyone give me any inspiration or recipes we might all like as I am so bored with the same old same old.

Pad Thai? Just made it and it's delicious. I added chillies for heat, but if you omit them it's not spicy.

Rice noodles, minced garlic+ginger+onion, chicken/pork/prawns (as you like), mushrooms/peppers/shredded carrot (as you like), bean sprouts and crucially pad Thai sauce (from a jar). All mixed up. Can sprinkle on peanuts if you want.

Its so sticky and sweet and delicious. I think it could meet your criteria. Can recommend an online recipe if youare interested.

We have never had pad thai so if you have a recipe to recommend that would be great.

Tried a new recipe tonight and it went down well so that can be a new regular, a chicken and chorizo stew. Tomorrow I will do a savoury mince dish with turkey mince and serve it with nachos which is another new one for us.

I hate to say it but you do both sound rather fussy.

How can you not like rice???? (genuine question) Isn't it just a bland thing you mix with something else and it fills you up?

So. Starting with the carbs, for example, you're looking for meals which don't include spuds, rice or pasta.

Hmm. Cous cous? Bulgar wheat.

Chilli con carne (doesn't have to be hot) with tacos. How about that?

Potato wedges. They're like chips, but not.

Get some spuds. Chop them into wedge shaped bits (clean the skin if necessary but don't peel it). Put it in a bowl and just enough olive oil to coat each piece when you stir it round, and shake over a bit of paprika. It's not spicy hot, just adds a bit of flavour.

Bake in the oven for 30 mins. Crispy on the outside, soft in the middle.

I'm intrigued though. When you say DH doesn't like potatoes, which sort? Mashed? Boiled???? (they're very dull, I'll give you that)

i have a really nice recipe for taiwanese pork balls with stir fried veg of choice and noodles - theres chilli and garlic and spring onions in the balls and uses sesame oil and soy sauce but you can adjust to taste if theres anything anyone not keen on - also with baby its not too hard to leave the chilli out of some of the balls

This is the pad thai recipe I use (adapted from this one). Serves 3 - 4. Most of the total prep/cook time is in the chopping, once you're in the cooking stage it only takes about 15m max.

  1. Dice 1 or 2 chicken breasts, and/or other meat e.g. pork or even bacon. Put in bowl to marinade with a tbspn soy sauce
  2. Boil a pan of water, and add 250g rice noodles. Turn off heat. Leave for 8m, then drain and rinse (they should still be very al dente) Put aside.
  3. Mince/finely chop an onion, some ginger, some garlic. Stir fry in hot oil for a couple of minutes. Add your meat. Add chopped peppers and mushrooms or shredded carrot if you want. Cook for a few minutes.
  4. Move all stuff to outskirts of pan/wok, break an egg or two into the centre, and quickly stir to scramble. Then mix in with rest of stuff
  5. Add noodles to pan
  6. Lower heat a bit, and add pad thai sauce (from a jar) a tbspn at a time and mix it in, letting it all cook inbetween tbspns. Add about 4 in total over about 5-10m. The noodles should be absorbing the sauce and getting sticky.
  7. Add a couple of handfuls of beansprouts and stir in.
  8. Remove from heat and garnish with lime and peanuts (or just omit them)
10. Done

bolshygirl those sound good care to share?

I can manage rice just find it really heavy and don't enjoy it, I prefer cous cous or bread. DH hates boiled and mashed potatoes, chips and small roasts he likes.

riverboat is pad thai sauce spicy? Your recipe sounds really nice.

Its not hot, at least not that I notice. Its more tangy in the way of sweet and sour.
