Banana muffins - there's loads of recipes on the net.

But that's a lot to use at once - if I have too many overripe bananas I slice them and freeze to bake with later.

Cut them in half and bake them with 1 lemon juiced, brown sugar, ground almonds and a bit of foil over them so they don't dry out. Doesn't matter if they are even quite brown as they end up very mushy anyway. Great with cream or icecream.
Nigella says to freeze them and blend them into milkshakes from frozen.

Just made Mary Berry's banana loaf from her Baking Bible. Its the best thing I have ever tasted! And so simple, just literally chuck all the ingredients together and mix for 2 mins. Although it only requires 2 bananas so you would have to make multiple loaves.

Banana bread loaf.
If you haven't got time to bake now put them in the freezer for later.

MN solved this problem for me and I now freeze them for baking with later. Only thing is I didn't peel them the first time. Whole black bananas in the freezer looks a bit odd and worse is to come when you try and peel them Grin They don't.

Nigella says to freeze them and blend them into milkshakes from frozen.

yes, you can do that with sliced peeled frozen bananaGrin

nemno · 29/08/2013 18:16

GrimmaTheNome You see you didn't say that at first, and neither did any other helpful bugger on another thread Grin

GrimmaTheNome · 29/08/2013 18:56

because I assume a certain level of nous I think it was implicit - I mean would anyone slice an unpeeled banana? Grin

nemno · 29/08/2013 19:03

Chastened . But but I didn't need to slice, slicing a non peeled banana would be stupid, who would do that!

Freeze the sliced, peeled bananas, then chuck in a food processor. Stir in a spoonfull of Nutella and you have instant banana 'ice cream'

I am lazy and freeze too-ripe bananas whole. They're a bit slimy when defrosted but the peel just slips off. I make banana bread or mostly Nigella's buttermilk banana pancakes. I tend to put more banana in than the recipe, and also whisk the egg white separately to stiff peaks, then fold in to finished batter. I freeze the pancakes in small bags then just nuke them to defrost. Dcs very happy to have these with bit of butter and maple syrup even on a school morning - quicker than toast!
Always mean to make the instant banana ice-cream thing, but never got round to it...

CMOT .... oh you are so not living up to your name with that recipe! (DD and I are currently on Interesting Times with Disembowel Myself Honourably Dibahla)

GrimmaTheNome · 30/08/2013 14:08

Mmmm - we each have a bowlful. DD pretended to pull a face and put it away from her when I told her who'd given me the idea - but not for long!Grin

I second Timothys suggestion. Funnily enough that's my plan for the afternoon. The loaves freeze well, taste lovely and Mary Berrys book has been foolproof so far.

CMOTDibbler · 30/08/2013 18:41

Grin Grimma Grin. My ds is 7, and we've just finished listening to the Bromeliad trilogy, so he knows about you too.

GrimmaTheNome · 30/08/2013 19:36

While it's entirely in keeping for CMOT to come up with a 'foodstuff' based on manky old bananas, it certainly shouldn't have tasted that good while actually being pretty healthy.
