what is your favourite meals for a week? we work full time with 2 small kids

Just bouht a slowcooker. want to improve our meals routine. please share your favourite workable meal ideas for a busy house.

using slow cooker it would be bolognese for lasagne, curry, chilli (with mince of beef chunks), stew, spanish chicken (paprika, garlic, peppers, onions, herbs, stock pot, salami, tin toms).

non-slow cooker. currently cooking a smoked streaky bacon, grated courgette, garlic, fromage fais, pasta recipe someone suggested here (husband doesn't like pasta or courgettes but still eats double helpings), omlette, bolognese, pitza using bread machine, variety of things from hairy bikers diet book. roast chicken, and rissotto next day.

if you are pushed for time, think in terms of doubling quantities and freezing some and dual purpose meals, eg chicken one day and rissotto, pasta, curry next day with lefovers. turkeys roasted on sunday can keep you going for a few days. bol one day, lasagne next.

am on a rol....but hopefully people will give us other ideas as i'm bored with same stuff

slow cooker - baked beans, chicken or pork or sausages, swig of white wine, tom sauce, garlic, origano, onion, tin of baked beans, stock pot. add some cornflour mixed in water if too thin at end.

chicken tray bake - hairy bikers - chicken portions, chorizo, peppers, onions, toms, bit of oil, pots cut up a bit, garlic. swill it all around in baking tray and roast.

carbonara is easy.

Probably my most successful and relatively quick to cook recipes that the whole family enjoy are:
Beef or chicken casserole
Spanish omelette
Tuna pasta
Fish cakes
Savoury pancakes
Chicken risotto
Roast chicken, beef or lamb ( takes longer but this is ok at weekend)

Should add I tend to boil loads of potatoes one day and then keep for using during the rest of the week, ie boil loads and serve some with stew, keep rest in fridge and mash some for fishcakes and slice rest for putting in the omelette.

I think jacket spuds are brilliant. You can all have them with the things you like. It's cheap and very nutritious if you eat with protein - baked beans, tuna, cheese, bit of chicken curry (or all of the above Grin)

Good Food website is great for family meals, quick ones, one pot, etc...

I cook from scratch when I get back from work most evenings, sometimes a quick one pot biryani, a sausage casserole, curry, chilli, I did a one pot chicken thighs, roasted veg inc rhubarb last night that was fab, risottos, etc.. Nothing takes more than 1.5hrs most are ready in half that. Tonight we've got the HB Chilli I made alongside Tuesdays dinner as the mince had gone out of date, so a nice easy night for me just reheat and cook some rice as someone looking at you DH ate the tortilla chips that were to go with it.

and others depending on the week and if we are eatimg with ds or not

Slow cooker staples for us are spag Bol, curry (of varying kinds), chilli. This is broken up with quick teas like beans n poached egg on toast, Spanish omelette, quesadillas, baked spud tuna n salad

Things cooked from scratch within 20 minutes (tops) - pasta carbonara, wraps (fajitas, or just wraps with stir fried chicken), risotto.

Pre-prepared meals - shepherd's pie, lasagne, pasta bake, spicy root vegetable casserole / curry with naan bread & poppadums, savoury rice, chilli, babootie, filling soups (pea & ham, chicken & veg, thai chicken & noodle soup etc. Make at the weekend, freeze / defrost in portions and then just microwave it as we get home.

No slow cooker, but I have some quick recipes:

  • salmon under grill with orange marmalade/ soy/mirin/ginger/garlic. Serve with stir fry carrot, spring onion, baby corn, sugar snap pea and noodles
  • fresh pasta (I keep portions frozen, and they take 5 min to cook) with a fresh tomato sauce (evoo, garlic, diced tomato, basil at end- can make more interesting by chucking in prawns towards end of cooking, which takes 20 minutes max)
  • chickpea pancakes (make batter in blender) with a spiced tomato sauce and yoghurt topping
  • Asian steak salad. Take steaks and rub with 5 spice, salt and pepper. Cook on very hot griddle. Serve with thinly chopped veg (carrot, red pepper, red onion, chopped mange tout) sliced papaya, and some rice noodles. Sauce with lime, fish sauce, dash of soy, dash of sugar, a couple drops of sesame oil
  • chicken skewers (marinate in am) under grill, sautéed/steamed veg, rice
  • pasta (fresh from frozen is fastest), kale pesto (can freeze potions), grilled chicken
