How much salad do I need for 100 people?

I need to order the salad for DD2's christening on Sunday, DP has a wholesale account with a local green grocer so is going to order the stuff but has asked me to provide a list of what we need as he is v v busy with work.

We are having a Hog roast and there will be bread rolls, olives, coleslaw, mini quiches and samosas (last two are my mums random contribution but there won't be enough for everyone to definitely have one).
I'm making 120 cupcakes on Saturday, so not doing puds.

So i want to provide a basic salad But i have no clue what sort of quantities to order. We will have two staff keeping an eye on the hog while we are at church so they could prepare the salad to give them something to do.

Does anyone have any ideas of quantities for this number of people?

Lettuce
Cucumber
Peppers
Tomatoes

Also, what else do you think we need? Have I missed something really obvious out?

Oh and I forgot to say that I have apple sauce, ketchup, sweet chilli sauce. Do you think I need a salad dressing?

1 iceberg or equivalent between 15 and the same for cucumber.
About 2/3rds of a tomato per person and 1/8 pepper

Past experience tells me there will be lots of sald left, guests rarely touch the salad and you already have lots of extras, trays of stuffing and apple sauce would be popular though.

I would say do no more salad then for 50 as most won't eat it.

Don't dress the salad they will wilt, have the dressings in separate bottles for people to help themselves plus some awkward people (namely me) don't like salad dressings.

I would do a mix of salad leaves (not iceburg - horrible lettuce) and then separate bowls of cherry tomatoes, maybe 3 sliced large cucumbers and peppers.

Second the do enough for 50, I'd do one cucumber and a punnet of cherry toms and a pepper between 10 x 5, then maybe a bowl of salad leaves, maybe just three big heads of different lettuce. I doubt many will eat the lettuce whereas the children coming are more likely to eat the tomatoes and cucumber. Have a lovely day, envious of the hog roast :)

Great, thanks! I hadn't thought about stuffing, so perhaps will do that. I will also if I have time whip up a big bowl of hummus and have that and some cornichons.

Yy to salad dressing separately, was more wondering if it was necessary at all really.

The only obvious thing missing is something for any vegetarian guests, other than salad and bread rolls, if you have any coming?

Superior- I'm not sure we do have any veggies coming, but the quiches and samosas are both veggie I think. I might get some cheese as well- it's not on my radar at the moment as I am on a wheat, egg, soy and dairy free diet but I do appreciate that other people may not wish to be quite so restricted!
There are a few coeliacs coming and I have been stockpiling prescription bread for them.

Ooh Giraffe those restrictions are tough!

I only mention it as my sister is veggie and in a family of carnivores gets left with crisps and salad as the only safe option sometimes.
