Anyone have a delicious nut roast recipe - without mushrooms?

Hi everyone, I need to make a vegetarian roast dinner this Sunday. One of the guests does not eat mushrooms. Can anyone help me, please?

Also, if anyone knows of a vegetarian gravy recipe - again, without mushrooms - that would be fab.

My fave is all approx measurements but:
250g bag of mixed nuts - I buy combinations I like without peanuts (I also add some sunflower and pumpkin seeds but you don't have to).
About 2 slices of whole meal bread maybe just less (I don't eat crusts so remove them)
Blend together
Add one egg
Nearly a whole grated zucchini and carrot
Squirt of BBQ sauce
Handful of grated cheese.

Put in lined bread tin at about 180 until it's gold ish on top.

Serve with mashed potato and roasted pumpkin and brussel sprouts with gravy. I buy a vegetarian gravy mix so can't help there (although these days I just buy ready made gravy usually because my principles have dropped...)

If I have some cooked pumpkin I add some mashed pumpkin to the nut loaf also.

I served this at christmas with the meat for the others and it was gone first and have had requests since!

Wow, that sounds fab, StupidFlanders! I might have a trail run tomorrow. Does the cheese go on top, or in with the other ingredients?

Cheese inside the mix, I'm not in uk so no idea about gravy!
Mash pumpkin makes it more moist but I usually don't bother as the gravy is good.

Bisto is indeed veggie, but you can also buy vegetable gravy granules.
Quick nut roast - buy chestnut stuffing mix, make it up, add grated veg,.chopped nuts, fried onion, maybe some cheese. Bake in a loaf tin.

I would go with bisto, over vegetable gravy granules. I've been veggie all my life but never had nut roast, will try this out! Thanks OP

I do v similar to Bike. Make up a packet of 'nice' stuffing. Add whatever you want - sauteed vege, nuts, chopped spinach, cheese (smoked is nice), chestnuts if not in the stuffing (or more chestnuts!). More cheese on top. Bake.

Bisto much nicer than the vegetable ones, if you want to use instant. Otherwise I melt butter and fry a finely chopped onion or shallot; add plain flour; add red wine or port; add water and a spoon Marmite; simmer until thick enough.
