What to do with lots of unripe pears???

Tomorrow I will be stripping a friends pear tree of what is likely to be unripe pears. She is away and it has to be done tomorrow due to access issues.

I have been preserving fruits like crazy the last few weeks but am unsure about unripe fruit. Can I make jam with them? What else can I do with them? I don't want them going to waste but I don't want anyone getting sick from their unripeness either!

Pears are low in pectin (and acid) so you would have to mix them with another high pectin fruit to help make the jam set.

You can make chutney though.

Would the pears just ripen up on their own like green tomatoes?

Have you though of ripening some in a paper bag with a banana placed inside? Bananas give off a gas (ethylene?) that causes fruit to ripen.
