Salad dressings?

I need some ideas that don't use vinegar, egg or milk please. Got lots of lettuce and want to persuade the children to eat more than half a leaf sneaked into a sandwich.

Yeah, lemon juice works.

Why no vinegar? We really like saffron vinegar, with olive oil.

No vinegar because my last homoeopathic remedy forbids it. Thanks for the ideas but could you do quantities as well? Salad dressings are my weak spot!

You want like 2/3 oil, 1/3 acidic thing (e.g. lemon juice), with a sprinkle of seasonning, if any.

Actually, there's a lovely lebanese salad, which has oil, lemon and a bit of cinnamon, that works well. It's a no-lettuce salad, though.

Another thing that works really well is to fry stuff (pancetta, seeds, chopped up bread) in some olive oil, then add the acidic thing at the end (vinegar, or soy sauce, or lemon I guess), then put that on the salad. Makes it more of a meal.

The lebanese salad, which is called fattoush ... how we do it is:

  • tomatoes, deseeded, chopped
  • cucumbers, ideally not english, deseeded, chopped
  • radishes, chopped
  • red peppers, chopped
  • mint, chopped
  • parsley, chopped

The dressing is lemon juice, olive oil, and ground cinnamon.

Then just before serving, you grill some pita or similar, so it is v crunchy, and break it up with your hands and sprinkle it in.

Really lovely salad.

Oh, if you do fried stuff, the chopped up bread is very popular. I also really like pumpkin seeds.
