Your best slow cooker recipes and tips please

DH got me a slow cooker for my birthday. I've never used one before.
Please share your favourite recipes and any tips.
I'm particularly interested in healthy/low fat recipes, but I'd like a good selection of ideas to start me off.

I find you don't really need any fat to cook in a slow cooker. I often just take all the raw ingredients and throw it in the pot, so long as you have liquid you don't need to cook it in any fat.

Chili is very popular, you can brown the meat and then rinse/drain any fat that may be clinging to the meat and then add it to the rest of the ingredients of your choosing.

I like to do a shoulder of pork and I always skim and remove the fat before serving. I just shred it and serve on bread with BBQ sauce. I also like to use the same meat for pork tacos, you just add seasoning to the meat, cumin, oregano, chili powder, etc and a little bit of tomato puree. You can also serve with Salsa as that is fat free and very low in calories.

You can just chuck a load of veg in the pot, top with broth, and then puree it and you have very healthy and tasty soup.

I bought a slow cooker the day before yesterday and my first stew turned out great! I'm a terrible cook so I was pretty pleased.

I bought pork cheeks (which are delicious btw when slow cooked, really tender, and I got 1kg of them in Waitrose for less than a fiver), chopped some shallots, carrots, potatoes and green beans then poured over stock and a bit of red wine. Added garlic and seasoning. At the end there was still quite a lot of liquid so I added some gravy granules to thicken it up. I left it on low for about ten hours.
