I'm going back to work from mat leave next month. Only going back part time so working 9-1. 10 month old DS going to mils. I'm trying to work out some quick and easy lunches that can be prepared in advance and are suitable for us both. He is blw so can manage pretty much anything I can eat but I don't want to do sandwiches every day as I don't want him having loads of bread. Any suggestions?

My current favourites are:

  1. Spaghetti Marco Polo.
    Prep: Chop a spring onion, grate some cheese (pref emmenthal/comte, but anything will do really), open tin of tuna, chop some olives, open a packet of chopped walnuts (unless you have nut allergies in family).
    Cook spaghetti, drain, toss in olive oil. Serve and put small helpings of toppings out for small child to make an unholy mess with mix into his portion

  2. Take some cooked chicken, tear roughly, add in some chopped grapes and some tarragon (pref. fresh), mix together with a good dollop of mayonnaise. Serve up with either new potatoes or green salad leaves

  3. Jacket spuds (leave in oven on timer so done by the time you're home), add any toppings you like.

  4. Coriander mushrooms here

Actually, the ED cookbook mentioned in the article is pretty good for decent, easy dishes that taste good and can be pre-prepped (including a rather superb chocolate cak).

When autumn comes can you do some nice hearty soups to re- heat or put in a flask? Great one to batch cook.

For summer wraps can be good or pittas - still bread stuff but a bit less maybe?
