Dinner party pudding ideas...

I am looking for something that:

a) looks good in individual glass bowls

b) can be dairy free

c) I can make in advance.

I was thinking maybe a lemongrass and coconut rice pudding topped with sweet spiced mango, but appreciate that rice pudding can be a bit hit or miss.

I've done something chocolatey already. Wanted to offer something else as an alternative.

Lemon posset. Hmmm. Isn't posset something to do with baby sick?

How do you whip coconut milk? How thick does it get?

Grown up jelly, maybe Orange and Campari or Tequila Sunrise, or Gin and Lime. Sugared rims to the dishes perhaps or slice of orange/bunch of red currants/sliced strawberry garnish, serve with little biscuits.

I tried to make a blackberry and sloe gin jelly but it hasn't set and it's quite a booming flavour.

Ha, posset is both a dessert and baby sick....it is weird that they share a name!

Coconut milk does whip quite well!

When you say it hasn't set, what exactly do you mean? I find that home made jelly sets very softly anyway. Apologies if you are an old hand at this and I am teaching you to suck eggs. Could you re-heat the mixture and add more gelatine? I haven't checked whether this would work!

Raspberry sorbet, with fresh raspberries and an almond biscuit or macaroon, sure you could find a dairy-free biscuit recipe. maybe drizzled with some raspberry liqueur ...

Or raspberry sorbet with sliced nectarines/peaches would also be nice, with toasted almonds to add a bit of crunch.

Ooohh... red berry champagne jelly! lots of recipes online and always goes down a treat! For some weird reason, all the other ones I usually do are dairy based...?

If you spot some ripe peaches or nectarines, then just peel and slice them up into a good dessert wine, garnish with mint or basil leaves, add a splosh of Triple Sec or similar just before serving.
