Veggie reciepies *needed* for a fam who don't like veggies....

I don't know what to do about getting more veggies into my families diet. None of us are big veggie eaters and I could never eat veggies that have just been steamed.

I've tried rue sauce,but this is very fatty and a 'yachkne' greek tomatoe based sauce (which dp doesnt like) so I end up cooking a second meal for him or feeling bad when he doesn't eat.

Any sugestions would be very greatly appreciate..Thanks Grin

Spag bol manages to hide loads of veggies in our house - I add tin tomatoes (obviously!) mushrooms, spinach, onion, garlic, Butter beans, peppers - you could even add some shredded carrot.

I also do a Risotto with similar to above which goes down well.

I also buy a basic piza and add my own mushrooms, pepper, tomato etc etc

Homemade veg soup - is easy. a pint and a half of stock with a chopped onion - I throw in broccoli, cauliflower, carrot boil it up for about 45 mins and liquidise

Veggie curry is really nice and roasted veg are really tasty too. And a stir fry with vegetables and noodles is quick and easy. hth

How about trying to find vegetarian recipes that are so yummy you don't notice there is no meat? I don't like plain veggies either btw and would prefer to eat a proper vegetarian meal than have a spponful of boiled/steamed veg with a "normal" meal. I do pasta sauces without meat regularly, stir fries also (oyster mushrooms have a good meaty texture). Maybe buy a vegetarian cookbook or just serve a bowl of salad with your normal meal

You can sneak carrots & swede into the mash for shepherd's pie, & just about anything (mushrooms, pepper, more carrots, courgette, aubergine, leeks, peas, sweetcorn etc etc) into the mince bit? I do mine with veggie mince & a tomato-ey bolog sauce, but meat mince would work too.

get some tinned tomatoes
mix in loads of different veggies, and cook
add mixed herbs/wine/black pepper/whatever flavours you like
then blitz in food processor

you can then use this sauce:
with pasta
in spag. bol
in lasnagne
as pizza topping

I was always adamant that my children would grow up loving veg, or at least tolerating it. Ds is 4 and we have given up and now figure hidden veg is better than no veg.
and pizza made with that sauce and a bit of cheese on top is so so so filling Smile
