Lasagne question...

Could I assemble a lasagne to the point before baking and keep in the fridge until the following evening? Would anything go horribly wrong?

Using dried lasagne sheets with no pre-cooking and homemade mince and béchamel sauces.

I normally do this but make the sauce extra runny as the lasagne sheets soak up lots of it. The pasta always turns out softer when left overnight I find.

The only thing I'd say is make sure the meat sauce is fairly cool when you assemble otherwise the sheets of pasta curl up!

Yes, it's fine, but assemble with cold sauces otherwise you end up with curled-up pasta - although it doesn't really matter unless the corners end up poking through the surface, which means they'll burn.

I quite often do this before going away overnight; uses up all the veg & milk in the fridge & there's an easy meal to come back to.
