What can I do with leftover roast chicken that I can then freeze?

I have over half a roast chicken left from dinner last night. We could just eat it plain, but there's more than enough for one meal and I won't fancy it again tomorrow.

Can I make something with it that I can then freeze? That would mean it was cooked from fresh, reheated in to another meal and then leftovers frozen, to be defrosted and reheated at a later date. Is that too many reheatings?

Any ideas what I can make? I was thinking of chicken shepherds pie as I also have leftover roast potatoes that I could mash.

Chicken ad mushroom risotto - hairy bikers one is lovely

And not too many heating ups, that would be fine. I sometimes freeze in little packets so can use in stir fry/ risotto/ pies in future.

Thanks Lego and Tricky. I made the chicken shepherds pie with half the chicken. The other half will be stir fried with rice tomorrow. So none left for the freezer after all.

How on earth do you get three meals out of one chicken? I just about manage one with maybe enough left over for one sandwich.

Sorry, I think that's too many reheatings. Cooked meat should only be reheated once - either before or after freezing, but not both.

Lego - it was 1 and a half chickens for 4 adults but there were 4 courses in total so we didn't need as much as normal.

Thanks mrsminivers, I suspect you are right.
