Hello everyone, I'm new to Mumsnet. I'm a mum to two boys aged 2.5 and 4.5 and 29 weeks pregnant with my third child and looking for food inspiration! We eat healthily but I'm stuck in a bit of a food rut and have just been reaching for fruit, oatcakes, nuts and seeds for snacks which are getting a bit boring. My boys are happy with the usual but I think we could all do with a bit of variation. Also...breakfasts and lunches are, again, usually healthy but samey. Any ideas?? Thanks in advance!

Smoothies recommended for breakfast. Just about any fruit (bar apples and pears) blended with milk and a banana goes down well here.
Flapjack is good or banana cake.

Make roast chicken and roast meat (lamb, pork, beef) on Sundays.
With the leftovers make curries, stews, fajitas, pita wraps.
Mince some ,and make shepherd's pie, stuffed pastries or pasties, stuffed potato patties, samosas (use filo pastry), bolognaise, lasagne, quesadillas, ravioli.
Have fried fish with garlic -no batter, fish curry, fish balls, kedgeree, fish pie.
Chicken noodle soup, fish ball noodle soup, with bowls of chopped coriander leaves, spring onion, crisp fried noodles, peanuts to scatter on top.
Lentil soup, curried lentils.
If you plan out a week's meals, you won't be hassled, and have something different without much trouble.

Mixed bean salad is great - tinned beans with no salt, kidney, cannellini, borlotti all good, mix with some chopped salad (pepper, cucumber, red onion, tomato, whatever you like), chunks of feta or cheddar, parsley, vinaigrette, keeps for a few days in the fridge.

Roast veggies with quinoa.

Baked sweet potatoes with tuna or cheese.

Frittata - fry onions, peppers til soft, add beaten egg and cheese, pour into an oiled bun tin, bake til lightly set.

Fajitas - fry chicken or fish and veggies, add paprika and cumin to taste, wrap in tortillas with sour cream and salsa.

Breakfast - Bircher muesli - soak rolled oats overnight in apple juice, in the morning add a dollop of natural yoghurt, defrosted frozen berries, sprinkling of seeds.

Nigella's breakfast bar recipe is good, keeps for a couple of weeks in the tin. www.nigella.com/recipes/view/breakfast-bars-55
