Feeding 11 for a weekend

My family are descending visiting this weekend and I am trying not to stress out too much about feeding them all. I am a decent cook but just don't feel like it atm and am dreading the constant loading/ reloading of the dishwasher. They are coming to attend an event but at different times, so I need flexible catering as well. Oh and my SIL doesn't eat red meat.
I've already thought out some of the menu but am stuck on other bits - any ideas much appreciated.

There are less of us on Friday night so I am thinking of keeping that fairly simple - nice pasta dish and salad.

Got croissants, decent coffee, juice for breakfast on Saturday.

Saturday dinner - we will be eating in shifts as people are going out at various times so I am thinking of cooking a ham and roasting a chicken and making a nice potato salad, Ottolenghi cucumber salad and perhaps a basic green salad as well and naice bread.

Bit stumped for Saturday lunch.

Sunday I am thinking we might go out for brunch and then I will cook something late afternoon before everyone leaves. Perhaps salmon in foil parcels in the oven - I do a lovely couscous salad with lots of fresh herbs, peas and broad beans - could perhaps do that with a green salad?

Just realised I haven't planned any puddings either! Help!

For Saturday lunch could you do picky bits- quiche/salads/french bread/cheese? Or a big pot of soup?

Puddings... posh yoghurts, fruit, mini magnums in the freezer?

Thinking of keeping things simple for you!

What about doing a chilli but with turkey mince for Sat night? If you have a slow cookery you could keep it warm and then it is available whenever people are ready to eat and you could just have crusty bread, tortillas chips and sour cream, cheese etc for everyone to help themselves. Then you could have the cold meats and salads and things for lunch.

Puddings, I would say something like various ice creams (and sauces/toppings if you want), maybe a fruit salad or just some fresh mixed berries and a cake should cover most bases and not really give you extra work.
