What to do with millet?...

Just that, really! I seem to have acquired a couple of bags of the stuff and not a clue what it's for, really - any suggestions gratefully received!

I also have some wheatgrains/wheatberries, and whilst I can make a nice salad with that my boiling it and then making a dressing with orange juice, honey, oil, sultanas, grated carrot, seeds etc, I don't really have any other ideas for it, so again, any advice appreciated!

My first suggestion was going to be salad :)

For a variation you could do one with roasted courgettes, peas, mint and feta?

I'm always buying these random grains and to be honest use them pretty much interchangeably - so anything you'd do with rice/quinoa/bulgur/couscous you can also do with millet/wheatberries.

Also, have a look at the 101 cookbooks blog - she does lots of wonderful things with grains.

Ooh millet, you lucky thing! I'm always desperately looking for it but they don't sell it in any of the shops round here so I have to wait till I get to a whole foods store in London.

I usually cook it to have with dinner like couscous or rice, but make extra so I've got a load of cooked grains leftover.

Then I do lots of things with it:

  • baked eggs and spinach: mix millet with some cooked spinach or other greens, put into a baking proof cup or ramekin, beat an egg with some milk, thyme, s&p and pour over the top of the millet, grate cheese on top and bake until egg is set and puffy
  • there's a lovely birthday cake recipe I've got that uses cooked millet - I've got the book itself but you can see it here on google books, see p.240. In fact if you search that book preview for millet you'll see some really good recipes for making all sorts of things with millet (morning cereal, croquettes, etc).

I also just saw this recipe for coconutty oat millet granola but can't vouch for it myself.

I've been trying to get hold of some. Mainly because I've had it sprinkled into bread/cereal bars and really like the crunch.

Shall be trying local health food shop next week, on the off chance.

Marzipanned SK.com is pretty much my first source-of-inspiration recommendation to anyone, ever, so I don't know why I didn't look there first! TBH though when she posted that recipe I wasn't blown away by it as I wasn't really sure what farro was...will have a proper look through the archives too. Roasted courgettes are pretty much my bestest thing ever so will definitely try a millet salad with them.

Xiaoxiong I am slightly smug to be considered so cosmopolitan, millet-wise, as we live miles from anywhere in a tiny village in the fiarly bleak Staffordshire Moorlands, and got it from the musty old health food shop in the nearest (v provincial...) town to us...don't want to make you jealous but I also have bulgar ;) That spinach and baked egg dish sounds delicious - will put that on my list.

MrsC I actually have a great recipe (somewhere) for flapjacks/cereal bars made with tahini, and I think millet wild be a great addition to these. Actually, I suppose I could just add it to bread too, could I?

This pantry clear-out has also left me with several different types of lentil, so it's going to b quite experimental, pulse and grains-wise, round here for a while...
