I never used to eat salad wasn't fussed on it but trying to eat a bit more healthily, I don't like tomatoes or crunchy lettuce though (iceberg etc prefer the leafy stuff like rocket/spinach)
Can anyone give me some tasty recipes or link to some

TIA

I love this salad

Walnut and advocado salad.

Half a bag of "leafy leaves" (like rocket etc)
1 or 1/2 advocado.
Small handful walnuts crumbled over the top.
Salt and pepper
Just before serving, drizzle with walnut oil.

If you want to make it heartier, you could add a bit of goats cheese and some sholewheat bread/rye bread.

I'm a bit chuck it all in with a nice dressing. You don't need leaves, either.

This is typical for me:

Cucumber, carrot, apple, celery, red onion, white cabbage. Some snipped herbs, usually basil, mint or chives.

Warm baked chicken done in balsamic vinegar and honey with a little whole grain mustard. Use the juices as a dressing and sharpen with lemon or lime juice.

I use lettuce and toms but you would leave out, obv.

Chickpea:

Fry some chorizo or pancetta in some olive oil til crispy. Take off heat and stir in two drained tins of chickpeas, a handful of parsley, 6 chopped spring onions. Put in serving dish and at this stages you are supposed to put cherry tomatoes on top, but if you don't like tomatoes any old salad veg will do such as chopped red pepper. Yum

Oven roasted butternut squash (cooled to room temp), lay on plate and scatter raw spinach leaves over. Maybe tin of chickpeas.

Dressing is a mixture of tahini with lemon juice, honey and natural plain yoghurt.

Check out any of Ottam Ottoleghis recipes. He's good on veggie salads

I have another version of a chickpea salad:

Can of chickpeas
half a very finely sliced red onion (or more if you like onion)
about a quarter of a cucumber also very finely sliced (cut down the middle first so you get semi-circles IYSWIM)
a good bunch of very finely chopped coriander or flat-leaf parsley (or mixture of both)
juice of a lemon
a good glug of EV olive oil
salt and pepper

mix it all up and leave for about 10-20 mins before eating to allow the flavours to mingle and for the rawness of the onion to calm down

We usually have with tuna skewers that have been marinated in rose harissa, but it's delicious on it's own or with various things. Sometimes also I mix in some baby spinach leaves as these seem to go well with it.
