Have tinned chickpeas, kidney and borlotti beans and usual household stuff what can i do?

Need insoeration for lunch what can i make with the above beans soemthing really easy.

I was going to put that piffle! Its the only thing I would make to disguise the horrible beans and chickpeas Grin

You can make chickpea puree, if you have greek yog and some garlic: boil chickpeas with garlic, for 15 mins. Then puree with a fair bit of greek yog and some butter. Makes a nice base, you can put veg or whatever on top.

I'd think all those kinds of beans would be a bit much, together.

I am begining to hate chili as i make it all tghe time with quorn as part of slimming world.

Other ideas pls am stuck and they need to be eaten today.

You could make a chilled bean soup. Boil them with some garlic and stock, add a spoon of sugar. Blitz, add ice cubes. Yum. (Works really well with kidney beans, ooh and a dash of chili to give it a wee kick!)

I think corn starch is corn flour. That really powdery stuff.

I'm trying to find another recipe I like. It's fishcakes made with tuna and chickpeas but can't find it just now.

OK. Can't find recipe on www so here it is.

SPICY TUNA AND CHICKPEA PATTIES

150g low fat natural yoghurt
good handful, chopped coriander
2 x 410g chickpeas (drained and rinsed)
400g tuna in brine (drained)
1 sm onion finely chopped
1 lg clove garlic, crushed
2 tbsp lemon juice
1 tsp cumin seeds
1/2 tsp crushed dried chilllis
2 tbsp plain four
4 tsp veg oil
12 cherry toms halved

mix yoghurt with half coriander and chill until needed.

Blitz chickpeas in food processore for few seconds - keep some texture. Put in bowl and flake in tuna, mix in onion, garlic, lemon juice, cumin, chillies and remaining coriander. Season, gently stir to mix all together. Shape into 12 patties. (i find it quite dry so I add egg yolk to mine) Dust with flour

Heat 1/2 oil in lg frying pan, cook 6 pattiess for 5-6mins turning over half way through. Keep them warm whilst you cook the rest in remaining oil.

Put tomatoes in pan and cook on high heat for 30-4- seconds. Serve with patties and coriander dip.

You obviously don't have to have the dip and tomatoes but they are nice.

THANKYOU All, in the end i made couscous with red onion, cue lemon juice, all the beans and some other veg. Was nice and will try the other recipes in the week.
