So is rice really the main culprit for food poisoning? And if so, how long would rice salad keep for in the fridge?

Mmmm I really fancy a rice salad now you come to mention it. IIRC you can keep rice for 24 hours in the fridge. After that it should be thrown away.

Rice can be contaminated with (again IIRC) aflatoxin. Can't be seen so there's no way of knowing it's there. If it is, can cause very nasty food poisoning.

Is it a main culprit? God yes. I had rice food poisoning once and I quickly moved through the stages of thinking I was going to die, knowing I was going to die and finally PRAYING I was going to die. Never fancied rice salad since...

It depends on how it's been cooled

To keep rice, you really need to cool it very quickly, i.e. by running it under a tap

I never risk it personally

I've heard this about rice too although i've never been affected by it.

I would keep it for about a day or 2 after i'd cooked it.

It can cause very nasty food poisoning, and because it is such a small molecule, it doesn't get 'unfolded' and destroyed by heating it.

I once worked with one of Britains best toxicologists and she would never eat reheated rice.....and she even ate the japanise puffer fish that can cause death if there is a trace of toxin left in it! Shock

I make my own 'ready' meals in bulk for when we're late home / feeling lazy and can't be ar$ed to cook. They often have rice in. Have we just been very lucky? I've had food poisoning but not through rice.

it always amazes me too because I've never had it but am quite lax with rice even though i "know" this..but then I've only had food poisoning at 21 year intervals! (so that's twice)

type of rice makes no diff

and it's not an aflatoxin (that's peanuts), it's a toxin from a bacteria that loves to grow in warm or tepid rice.

I avoid rice that's been kept warm in restaurants, buffets etc, but am happier if I've cooked it myself so I know what's happened to it. Often cook, chill and reheat with no adverse effects.

Can indeed cause nasty food poisoning though.

Shock had no idea rice could give you food poisoning - often re-heat rice dishes the next day in microwave. What are the other top foods for food poisoning? Anyone know?

yes main culprit- but its more reheated takeaway rice (ie the takeaway makes it then reheats it and sends it out) that is a problem.

I will not eat rice that has gone O/N, very bothered about it being fresh as possible, DSil is a EHO, she will chance lots of things but not rice.

Thank you Mrs Badger, I had a feeling aflatoxin was wrong.

Once spent a day with some EHOs. Put me off eating out for ages... there is no way you can tell from front of house whether food is prepared safely or not. The worst place we visited made the food for the pub over the road. Bleurrggh. Felt like running over there and shouting 'STOP'. And they weren't even closing this place down! The scary thing was the man running it just didn't seem to understand that he'd been doing anything wrong.

V. funny going out for lunch with them though, they gave us a very serious warning about not mentioning that they were EHOs. Apparenty unscrupulous restauranteurs have been known to seek revenge...

DSIL, never ever declares her hand,...if she is more than a bit wary she just uses a freebie Insitute of EHo or whatever it says, pen, and leaves it on the check as she signs it.....they normally bring it back and try and ascertain that she had really enjoyed her meal.Grin

I would chuck.........rice is cheap, redo and be sure. Or.....................you could feed it to your darling Mama, running to the loo, would keep her toooooooooooooooo busy to sigh down the phone at you, you selfish creature. Grin
