Hi, just thought about making this for the freezer and I gave the book away to charity!! Please does anyone have this recipe, I have looked on the internet and can`t find it Thank you.

Hi Agent...........it is always a success, first made this in the 80`s! Great to make and freeze for whenever!
Meringue
Sift 7oz icing sugar into a bowl
Whisk 3 eggs whites in large bowl until they reach the soft peak stage.
Put the bowl over a large pan half filled with gently simmering water and whisk for approx 5 mins until stiff
Whisk in 2-3 drops of peppermint essence
Heat the oven to gas 2/150c/300f
Put a large sheet of greaseproof paper onto a baking sheet and spread meringue mixture over it until about 1" thick
Put onto bottom shelf of oven and cook for at least 90 mins until firm and dry.............cool

Puree 8oz of ripe bananas with the juice of half a lemon
Whisk in 3 egg yolks with a pinch of salt until pale
Dissolve 6oz Demerara sugar in 6 tbs water in a saucepan then boil fiercely for 3 mins and pour immediately in a thin stream onto the egg yolks whisking all the time at a high speed.
Continue whisking for 5 mins until pale and thick, then whisk in the banana puree
In another large bowl whisk 1/2pt (300ml) of double cream until thick but not stiff
Pour the banana and egg mixture into the cream and fold in

Turn the cooked meringue upside down, peel of the greaseproof and break up into rough pieces
In a deep 8" cake tin make layers of icecream mixture then meringue, ending with a layer of icecream
freeze for up to 3 months
When ready to serve rub a hot cloth around the tin, turn out onto a plate and sprinkle with shavings of plain chocolate.

Will serve 10

Sounds a lot of work but is well worth it, if I am in a hurray I cheat by buying meringues shells (approx. 8) break them up and sprinkle with peppermint essence
