Pork Loin

I usually roast it just studded with garlic and stuff in some thyme and yes it's lovely but I fancy a change.
Any ideas for what I can do for our Sunday dinner,it's a 2kg joint.

What about pulled pork? Loads of recipes online. I also like to do it in cider with apples or pears and onion. Makes a delicious gravy and the pork very tender.

cut it and en croute it, with stuffing with chorizo. One of our faves.

Do you mean the pork in cider? I put sliced onions in the bottom of a roasting tin and sit the pork on top. Then add a can of cider and a couple of chopped apples. A sprinkle of sage and pop in the oven on Hugh for 20 mins, then cover with foil and cook at about 160 until juices run almost clear. Then I rest it for a good half hour and thicken the juices with flour to make the gravy. Add salt and pepper and maybe a pinch of sugar to taste. Serve the apples with the pork but strain the onions off if you like.

I always undercook any joint as the resting finishes it off without losing juices or making it tough Smile

Oooh, the pork in cider sounds good! I've currently got a loin of pork marinating in hoisin sauce, honey, sugar, ginger, garlic and 5 spice (I've vaguely followed Gok Wan's recipe for Char Sui pork). Smells pretty good already, though I'm hoping that isn't lost upon cooking!

Not pork, but it could work - I just marinaded shoulder if lamb in cumin, garlic, paprika, balsamic vinegar and redcurrant jelly. Served with naan bread and mint mayonnaise, red onions and peppers.

I chuck the cheap pork cuts in the slow cooker (trimmed of fat) with a can of strongbow (not found another cider that works well), garlic and black pepper, with a bit of chopped onion. A few hours later add some (think it's bisto best pork, little jar) gravy granules/powder and serve with mash/sweet mash mix. It's absolutely gorgeous, and so easy. Only the cheaper cuts work though.
