Wheat free...help!

Hello (again)
DH has recently gone wheat free and is feeling so much better....but really struggles with inspiring lunch / dinner options. (And i don't think he's really eating enough!) I try to make wheat free dinners where possible so can you suggest some wheat free lunch / dinner options? Thanks!

I'm gluten free (although not sure how exciting my lunches are!). Making a scone based pizza with gluten free flour works well (I don't roll it out though, more press it into the tin - I use around 250g sr gf flour, 40g marg, around 125ml milk in the base). I also make quinoa and veg salads for lunches, savoury bread and butter pudding using gf bread (add cheese tomatoes and onions/whatever you have in the fridge). I make meatballs from ground nuts to have with gf spaghetti and tomato sauce (I'm veggie too) which I really like. There's always baked potatoes....

Oh, and you can now buy frozen gf pastry, use that to make a lovely quiche and I've also seen frozen gf yorkshire puddings so you could do a roast.

I eat (mostly) wheat free, and work lunches usually consist of:
homemade soup in a flask,
dark German rye bread with some protein (fish, strong cheese),
cottage cheese salads,
lots of black pepper Ryvita,
cold Spanish omelette,
potato salad with ham,
rice salad with tuna/salmon,
egg mayo with oatcakes

Rice and potatoes are gluten free and gluten free pasta isn't too bad. What were you eating before his diagnosis? Home cooked food is easy, processed foods are more tricky.

Thanks for the suggestions, the lunches are particularly useful as lunches were previously wraps, sandwiches and pasta (mainly).

Everything I cook is from scratch so its fine to substitute but it has made me realise how much we ate pasta!! I have a look for some GF pasta but if its anything like the lacto free things I have..it's nothing like the real thing! Even things like sausages, stock cubes and shop bought soups are out so I just need to widen our repertoire!

Some Black farmer sausages are gluten free - you can buy them anywhere. Musks Newmarket sausages - available in Waitrose - careful you don't buy original recipe. M&S do a Premium sausage 93% pork which is also gluten free. The pasta isn't too bad.

I recently got Phil Vickory's gluten free for kids book from the library, it has some very good everyday ideas - I bet you cook lots of gluten free stuff already and his book just reminds you of all the familiar food that are fine to eat. He's got one for adults too but I haven't had a chance to look at that yet.

re stock, i use marigold bouillon, it's available at the supermarkets and is really nice.

kallo stock cubes
genius bread from sainsburys / waitrose etc or any gluten free bread
corn pasta (e.g. doves farm or any supermarket own brand)
corn crackers / rice cakes instead of bread / crackers
gluten free flour directly replaces normal flour in all uses.
soup
fish/meat + veg +rice/polenta or any root veg
breakfast - cornflakes/rice kris pies or pick at a bowl of mixed fruit and nuts or eggs or gluten free toast or porridge or yoghurt with berries and granola etc
